I saw this week sometime and can't remember which issue. Can anyone help out?

Apple-Cider Pie

Crust:
2 cups all-purpose flour -- divided
1/3 cup ice water
1/2 teaspoon salt
1/4 cup chilled stick margarine or butter -- cut into small pieces
1/4 cup vegetable shortening
Filling:
2 cups apple cider
1/3 cup sugar
3 tablespoons cornstarch
2 tablespoons fresh lemon juice
2 teaspoons vanilla extract
1 1/4 teaspoons pumpkin-pie spice
3 pounds Cooking Apples (such as Braeburn, Rome,
Macintosh, -- peeled and quartered
Cooking spray
Remaining ingredients:
1 large egg -- lightly beaten
1 tablespoon water
1 tablespoon sugar
1. To prepare crust, lightly spoon flour into dry measuring cups; level with a knife. Combine 1/3 cup flour and ice water, stirring with a whisk until well-blended. Combine 1 2/3 cups flour and salt in a bowl; cut in margarine and shortening with a pastry blender or 2 knives until mixture resembles coarse meal. Add ice water mixture; toss with a fork until moist. Divide dough in half. Gently press each half of mixture into a 4-inch circle on heavy-duty plastic wrap, and cover with additional plastic wrap. Roll one half of dough, still covered, into a 12-inch circle, and chill. Roll other half of dough, still covered, into an 11-inch circle; chill.
2. To prepare filling, bring cider to a boil in a large, heavy saucepan over high heat. Cook until reduced to 1/2 cup (about 20 minutes). Cool completely.
3. Combine cooled cider, 1/3 cup sugar, and next 4 ingredients in a large bowl. Cut each apple quarter crosswise into 1/4-inch-thick slices. Stir apple slices into cider mixture.
4. Preheat oven to 450 degrees.
5. Remove top sheet of plastic wrap from 12-inch circle; invert and fit dough into a 9-inch pie plate coated with cooking spray, allowing dough to extend over edge of plate. Remove top sheet of plastic wrap. Spoon apple mixture into crust, and brush edges of crust lightly with water. Remove top sheet of plastic wrap from 11-inch circle; invert and place on top of apple mixture. Remove top sheet of plastic wrap. Press edges of dough together; fold edges under, and flute.
6. Cut 6 (1-inch) slits into top of pastry using a sharp knife. Combine egg and 1 tablespoon water. Brush top and edges of pie with egg mixture, and sprinkle with 1 tablespoon sugar. Place pie on a baking sheet, and bake at 450 degrees for 15 minutes. Reduce oven temperature to 350 degrees (do not remove pie from oven), and bake an additional 45 minutes or until golden. Cool on a wire rack. Yield: 10 servings.
Thanks so much to both of you! Isn't awful to have such a short memory? When I worked, I worked at it and kept everything in "my mental filing cabinet." I suppose I have just fallen apart (relaxed) since I am not working.
I could see the picture and the recipe, but for the life of me, I could not remember which issue. My refrigerator downstairs is full of apples. I had bought several--1/2 bushel of GingerGolds and a peck of Galas and then my mother brings me a 1/2 bushel of winesaps. I am not complaining, but I have to use some of these before Thanksgiving or I'll not have anywhere to put extra food, the desserts, the salads, etc. so I am going to try out some new apple recipes.

Wow. I want to go apple picking this weekend. Have fun with all those apples, and let me know how that pie compares to the Blue Ribbon one!
And I can't imagine how you'd ever be able to memorize which recipes came from which issue!!! My goodness, with nearly 100 in each issue, it would be impossible to keep mental track of a few years worth of issues!! So no apology necessary - you'd have to have a bionic memory!:D

This is the best recipe! I love it. It's easy for me to remember where it came from, because it was in the October 98 issue, and I got married in October 98. I had to wait until November to read about it, and it was October 99 before I got to try it.
I have made it several times and it is wonderful!

I have never made an apple pie from scratch and I promised my husband that this would be the year! I'm going to use this recipe, but which apples are best to use? We are going to the orchard in two weeks. Thanks!

I love this pie, too! I always use Braeburn, and they come out great.
