View Full Version : Review: Lemon-Flaxseed Loaf Cake
I made the Lemon-Flaxseed Loaf Cake from May 2000 yesterday and it is delicious. I cannot believe I have waited this long to try flaxseed. My DH says I have gone flaxseed crazy, but everything I have made with it so far is very good. So far, I have made the muffins on the Bob's Red Mill package, the baked chicken with the flaxseed coating, and now this bread. I would recommend all three.
Another benefit: it is supposed to help lower LDL without lowering HDL. It has other benefits, but this one is very important to us.

Thanks for the review. This sounds great! A friend made this recipe a couple of months ago and raved about it (I didn't get to taste it)... she's been bugging me to try it ever since. And I do have a package of flax seed in my freezer that's only been used for smoothies so far... :)

When I cook oatmeal for breakfast, I add a good slug of flaxseed to it. You have to stir the oatmeal a little more often (I only cook it for 5 minutes anyway) otherwise the flax may stick a little to the bottom of the pot!

This cake got me hooked on flax seed. I was wondering if this could be made as muffins? How should I adjust the cooking time?
I don't know as this is the first time I have tried them. If you are looking for a good flaxseed muffin, try the one on the package of Bob's Red Mill Flaxseed Meal. If you don't have access to his product and would like the recipe, I'll be glad to post it.
I forgot to mention that I have also made the Crusty Whole Wheat and Flaxseed Rolls and we liked them very much.

All the buzz about flaxseed on the board got me digging around for these recipes. I really loved this quick bread "loaf cake". Yummy! It's hard not to eat 3 slices at a time although I did feel self-righteous about it since it has all that good omega-3's in the flax.

We are still loving it also. I usually make two and freeze one without the glaze. Then when I need a quick breakfast bread or a simple dessert, I can pull this loaf cake from the freezer and add the glaze. I try to add flaxseed to lots of things such as other quick breads and oatmeal.

That is a great idea to make two loaves and freeze one. I've been "evangelizing" this recipe to my mother and my friends. It's good and good for you. I liked the flecks of the brown flaxseed meal throughout the bread. I will definitely try to work in more flaxseed or flaxmeal into my baking.

My first attempt never really happened; I don't have a coffee grinder, and buzzing my flax seeds in my Black & Decker Chopper did absolutely nothing. Fortunately, I found flax seed meal at the farmer's market.
I thought I had lemons, but in their absence I made an Orange Flaxseed Loaf Cake. Yum!
