View Full Version : Help! I can't find a favorite recipe

Hi guys. I'm about halfway through my first year of subscription to CL (ane I *love* it!) I have thumbed through all my old issues and can't find a recipe (it's not in the online index, either--I tried!)

It's something like pork chops with vegetable ragout. There was a lot of spinach or arugula in the ragout and it seems to me it was in the April May or June issue. My fiance and I loved this recipe and I'd like to make it again. I'd appreciate any help/suggestions.

Could it be Jagerschnitznel in the June issue page 212? It has mushrooms, bell peppers, onion,carrots and tomatoes.

Actually--sorry to throw everyone off; I talked to my fiance and it was actually fish, not pork chops--but as you can see it was the ragout that was really memorable!
Unfortunately, not the Jagerschnitzel. Thanks for your help, though.

I believe that you are talking about "Pan Seared Cod over Vegetable Ragout" from May, 2000, p. 134 (lemon cheesecake issue). Looks good.

I can't believe I couldn't find it--I just made paella from a recipe in the same issue the night before! Thanks again. It's exactly what I was looking for.

Okay, Liss, now you have got us going and are going to have to post the recipe for us who did not clip that one before they through the magazine away. Hubby and I are trying to eat more fish and would love to try one that someone else has tested for us. Plus, my pots of arugula are about big enough to pick!

Pan-Seared Cod Over Vegetable Ragout

2.5 t olive oil, divided
1/2 c. diced prosciutto (~2 oz)
3 garlic cloves, minced
4 c. thinly sliced shiitake mushroom caps (~10 oz.)

1.5 c. chopped leek
3 c. diced plum tomato (~1 lb)
1/4 t salt
1/4 t freshly ground black pepper
1 (10 oz.) pkg fresh spinach, coarsely chopped (you could sub your arugula here, I imagine, although I've never tried it!)
1 c. torn fresh basil leaves
4 (6 oz) cod or other firm white fish (1" thick)
1 T all-purpose flour

(1) Heat 1/2 t olive oil in skillet onver low heat. Add prosciutto, saute 5 min. Stit in garlic; remove from pan. Set aside.

(2) Heat 1 t olive oil in pan over med-hi heat. Add shrooms and leek; saute 8 min. Stir in tomato, salt, pepper. Gradually add spinach (or arugula?) and stir until greens are wilted (~ 3 min.) Stir in prosciutto mixture and basil. Remove from pan; cover and keep warm.

(3) Heat 1 t olive oil in pan over med-high heat. Dredge fillets in flour. Add fillets to pan; saute 3 min on each side. Cover and cook 2 minutes more or untils fish flakes easily when tested with a fork. Divide spinach (arugula?) mixture among 4 plates, top with fillets. Yield 4 servings.

Per serving (1 fillet + i c ragout): cal 287 (20% from fat), fat 4.6 g (sat 1.2g, mono 3g, poly 1.4g, protein 39.1 g, carb 20 g, fiber 5.9 g, chol 82 mg, iron 5.3 mg, sodium 525mg, calc 146mg

**I basically copied this right out of CL, except for the arugula part. My mistake--the recipe only calls for spincah; but I have used them interchangeably on some recipes in the past. Let me know how it works with this one if you try it. http://www.cookinglight.com/bbs/wink.gif**
