I searched for Feta and found over 500 threads. My wonderful neighbor gave me about a pound from NYC, her father gave her a lot and she shared!! What would you make with it ? I am looking for your favorite feta recipes. (Besides the obvious, we cut a chunk and eat it, her children's favorite way to eat it and mine!) Thanks!!

I would say make salads or a pizza with roasted garlic and red peppers and caramelized onions with the feta! That is probably one of my favs!

I love it with sliced tomatoes with some balsamic vinegar drizzled on it. It's not much of a recipe but I know great minds here will offer lots of good ideas.

This isn't very original, but the other night a friend and I baked some chicken breasts with LOTS of minced garlic, dried oregano, lemon juice, and a little bit of olive oil. We crumbled feta cheese on the chicken before serving. It was very simple and very yummy!

Vidalia Onion Risotto with Feta Cheese

Recipe By :

Amount Measure Ingredient -- Preparation Method

2 teaspoons vegetable oil
2 cups chopped Vidalia or other sweet onion
2 large garlic cloves -- minced
1 1/2 cups uncooked Arborio or other short-grain rice
2 (14 1/2-ounce) cans vegetable broth
1/2 cup (2 ounces) crumbled Feta cheese -- divided
1/3 cup chopped fresh flat-leaf parsley
1/4 cup (1 ounce) grated Parmesan cheese
Freshly ground pepper

Heat oil in a medium saucepan over medium heat. Add onion and garlic; sauté 1 minute. Stir in rice. Add 1/2 cup broth; cook until liquid is nearly absorbed, stirring constantly. Add remaining broth, 1/2 cup at a time, stirring constantly until each portion of broth is nearly absorbed before adding the next portion of broth.

Remove from heat; stir in 1/4 cup Feta cheese, parsley, and Parmesan cheese. Spoon rice mixture into a serving bowl; top with 1/4 cup Feta cheese and pepper.

Serving Size: 1 cup

Vidalia Onion and Feta Cheese Risotto is definately one of our favorites!!!!!

Also, in the New Cooking Light magazine (the fast and easy supplement), there is a great recipe for green beans, red peppers and feta cheese. I just had it for lunch, and it was great.

Add some feta to your favorite grilled chicken caesar salad--it's yummy!

My hubby and I both love this recipe....

Basil Shrimp with Feta and Orzo

1 regular-size foil oven bag (I just use heavy duty aluminum foil)
Cooking spray
1/2 cup uncooked orzo
2 teaspoons olive oil, divided
1 cup diced tomato
3/4 cup sliced green onions
1/2 cup (2 ounces) crumbled feta cheese
1/2 teaspoon grated lemon peel
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
3/4 pound large shrimp, peeled and deveined
1/4 cup chopped fresh basil

1. Preheat oven to 450º.

2. Coat inside of oven bag with cooking spray. Place the bag on a large shallow baking pan.

3. Cook the pasta in boiling water 5 minutes, omitting salt and fat; drain. Place the pasta in a large bowl. Stir in 1 teaspoon oil and next 7 ingredients (1 teaspoon oil through pepper). Place the orzo mixture in prepared oven bag. Combine shrimp and basil. Arrange shrimp mixture on orzo mixture. Fold edge of bag over to seal. Bake at 450º for 25 minutes or until shrimp are done. Cut open bag with sharp knife, and peel back the foil. Drizzle with 1 teaspoon oil.

I am trying to be careful so as not to over-Feta my DH. I could never tire of it but am afraid he might!! Forgot about all these great recipes, thank goodness it lasts a long time in the fridge!!

Susan.....it will last even longer if you have a Foodsaver with canister/jar attachment. We love feta sprinkled on our salads. I love it sprinkle on a mixed green salad with sliced pears, walnuts, raisins. Add some to your favorite rice pilaf. :)
