View Full Version : Oven-Roasted Applesauce from Martha Stewart

I copied this recipe for Oven-Roasted Applesauce from the CL board, but I'm not sure who posted it. The list of ingredients doesn't call for butter, but the instructions do... Can anyone help with the amount of butter?

I made this today, adding about 1/2 Tablespoon butter. It is a definite keeper. YUMMY! JennyLiz

Oven Roasted Applesauce Nov.98 issue of Martha Stewart Living
makes 2 cups
1/4 cup brandy or cider
1/2 teasp ground cinnamon
pinch of ground cloves
1 teasp freshly squeezed lemon juice,plus zest of 1 lemon
1/4 cup plus 2 tablsp of packed dark brown sugar
3 granny smith apples,peeled,cored,and cut into eighths
3 mcintosh apples,peeled,cored and cut ino eigths
pinch of salt
heat oven to 375 degrees.in a 12 x 14 inch roasting pan or an 11 x 17 inch baking pan combine the brandy,cinnamon,cloves,lemon juice and zest,brown sugar and butter.add all the apples and toss.roast until the apples are very soft and golden brown abot 30 minutes.transfer apples to the bowl of a food processor and pulse until smooth.stir in the salt.serve warm.

JennyLiz,

According to my Nov. 1998 MSL issue, the recipe calls for 2 tablespoons of unsalted butter. That should do it!

Here's the corrected recipe, for anyone who wants to copy it!

It wasn't me who posted the original - I just happen to have a collection of MSL magazines - embarassingly enough all the way back to '93!

Oops!!! I was the original poster (think it was on the old CL bb). Sorry about the missing ingredient! I had gotten it off the MSLiving bb where someone else had posted it. I haven't made it yet but have been looking forward to those fall apples! Glad to hear your review.

Lindrusso - so thrilled to hear that you keep back issues of MS Living. I wonder if I could ask a favor - I saw an article & recipe on how to make tomato sauce like restaurants do. I think it was the Sept. 1998 issue. It looked so delicious.

I went to the website at the time to get a back copy of this issue, but no luck. Is there any way you could post or that I could get a copy from you?

The article and recipe you are referring to is Spaghetti 101. I did find the recipe on the MSL site and it is the same as the recipe in the September 1998 issue:

If you want the entire article, I would suggest checking your local library - they should have back issues - it's a bit too lengthy to post. If that doesn't work, you can always email me your address (if you feel comfortable doing so) and I'd be happy to send you a photocopy.
