View Full Version : Help!! Dinner Guests.....

Hi all! I need some help on this one. My husband and I are having two of his friends from college over this weekend. They are only staying for dinner on Saturday night. We thought about a BBQ since the weather is still pretty hot, but I don't know what to make! We don't eat meat, but they are hard-core steak fans, and I know my husband would love to cash in on this excuse!! He thinks we should make some beef...I'll just throw on some veggies and maybe a fish steak. I was interested in making the Tuna with Rainforest Glaze...sounds yummy. But did anyone try the Churraso (sp?)?? What do you guys think? Should I give in and cook some beef for them? Can you think of any side dishes to cook with the Tuna? I would make swordfish, my fav., but its so darn expensive and these guys are all big eaters. Maybe I will save some money just doing the steaks?!?! ARGH!

There was a spicy-rubbed flank steak in a summer issue of CL that looked good. Flank steaks aren't quite as expensive as other cuts.

What about shis-ka-bobs? Sorry if that is spelled wrong! That way you can have veggies, steak, and fish if you want.

The churraso (sp?) was excellent. The chimichurri sauce was a bit spicy but, good as well.. The marinade for the steak was soo good. I had it on pork tenderloin too and it was also great. I highly suggest making it. Everyone will appreciate it!

Here are two suggestions that I hope will help.

If you want to do some steak and some fish, I have a recipe for veggie kabobs that you can use as a side dish and they can be done on the grill. They are delicious.

If you'd like to have something that would please vegetarians and steak-eaters alike, how about the Fajitas from the June issue? I did this recently - we had some people who didn't like chicken, some people who didn't like steak and some who didn't want meat at all - so we had steak AND chicken. If you serve the fajitas with rice (I also have a good recipe for Mexican Rice) and maybe some beans, it would make a full meal for you too.

If any of these ideas appeal to you, I'd be happy to post the recipes.

Two thoughts:

I say let your husband splurge on the beef! After all, eating healthfully is like dieting and you don't want to feel deprived.

Why not try the fajita suggestion and make a batch up for yourself with portabella mushrooms?

Oh -- and the churrasco got rave reviews on the September Reviews thread. Sounds like that would be a good option...

Personally, I think tuna steaks for everyone would be wonderful. We don't eat meat and our meateater friends love our tuna steaks. I usually marinate them in a teryaki marinade. Side dishes -- steamed broccoli with sprinkles lemon juice and/or lemon zest on top; brown rice with slices of green onion sprinkled throughout. Bulgar, also with green onions, instead of rice would be a terrific subsitute grain. Marinate mushrooms (button or portabello) with tuna and grill/broil those. If you have access to decent tomatoes (versus those indecent tennis ball things)-- cut them in half, sprinkle some seasoned dry bread crumbs on time (add a little extra parmensan if desired), bake for 20 minutes in a 350 degree oven. Baked tomatoes are a great accompanient to any steak -- meat, tuna or salmon. And so are twice baked potatoes, which can be made ahead and then warmed up prior to eating. I know this is a lengthy post -- but there are lots of great possiblities.

My favorite is the Rubbed Flank Steak with Horseradish Cream from the June '99 issue. I wonder if this is the one Beth mentioned? It is just the BEST and is one of my all time favorites. I almost always use this recipe when we have company and it is always devoured and makes me wish I'd made more. If you do make it I always make a little extra horseradish sauce because it's so tasty. I can post the recipe if you'd like! Good luck-sounds like a fun weekend!
