I know there have been many looking for good crock pot recipes lately and I just tried a great CL one last night and wanted to pass it on. It couldn't have been any easier. It was called Provencale Chicken supper, or something like that. As I cut out and file my recipes, I have no idea what issue it is from.

Provencale Chicken Supper

4 Skinned chicken breast halves
2 tsp dried basil (I used fresh)
1/8 tsp salt
1/8 tsp pepper (I am sure I used more)
1 cup diced yellow pepper(1 pepper)
1 16 oz. can cannellini beans, rinsed and drained
1 141/2 oz can pasta style tomaatoes, undrained (I used italian style stewed tomatoes)

Place chicken in crockpot, sprinkle with basil salt and pepper. Cover with bell pepper, beans and tomatoes. Cook in covered crock pot for 8 hours.

I makes a simple stewed bean and chicken dish with lots of flavor. The chicken falls away from the bone. It looks a bit like a cassoulet. My 2 year old said "more beans please".
