I have made a waldorf salad before, but I think that it is really high in fat. So I was wondering if anyone knows of one that is lower in fat? If so will you please post?

Andrea, this isn't a "traditional" Waldorf salad, but I made this for a New Year's Eve dinner party and it was a tremendous hit.

Modern Waldorf Salad
Bon Appetit March 1996

The traditional apple, walnut and chopped celery salad is updated with a yogurt and low-fat mayonnaise citrus dressing, pine nuts and Cajun seasoning.

1/4 cup low-fat mayonnaise
1/4 cup nonfat plain yogurt
2 Tbsp. orange juice
2 tsp. grated orange peel
1/2 tsp. Cajun seasoning

1 head romaine lettuce
1 grapefruit
1 firm but ripe Bosc pear, peeled, cored and diced
1 tart green apple (such as Pippin),peeled, cored, diced
1 cup seedless grapes, halved
1/3 cup chopped dates

1/4 cup pine nuts, toasted

Mix mayonnaise, yogurt, orange juice, orange peel and Cajun seasoning in small bowl to blend. (Dressing can be prepared 1 day ahead. Cover and refrigerate.)

Line large bowl with lart outer leaves of lettuce. Chop enough remaining leaves into bite-sized pieces to measure 6 cups (reserve remaining lettuce for another use.) Place chopped lettuce in another large bowl. Using small sharp knife, cut off peel and white pith from grapefruit. Cut between membranes to release grapefruit segments. Cut segments in half. Place in bowl with chopped lettuce. Add diced pear, diced apple, halved grapes and chopped dates. Add dressing to salad and toss to coat.

Transfer salad to to leaf-lined bowl. Sprinkle salad with pine nuts and serve.

6 servings

Per serving: calories, 141:total fat, 5 g., saturated fat, 1g.; cholesterol, 6 mg.

Hi. This is from Prevention magazine. It appeared in a healthy makeover for the waldorf salad

SALAD
2 cups chopped apples
1 1/2 teaspoons fresh lemon juice
1/3 cup chopped celery
1/4 cup raisins
3 tablespoons chopped walnuts
DRESSING
1/3 cup fat-free vanilla yogurt
1/4 cup frozen reduced-calorie whipped topping, thawed
1/2 teaspoon grated lemon peel
1/8 teaspoon ground nutmeg

TO MAKE THE SALAD: Place the apples in a medium bowl. Sprinkle with the lemon juice, then toss. Add the celery, raisins and walnuts.

TO MAKE THE DRESSING: Place the yogurt in a small bowl. Add the whipped topping and gently fold in. Then gently fold in the lemon peel and nutmeg. Add the dressing to the apple mixture. Gently fold in until the apple mixture is coated.

Makes 4 main-dish servings.

Why not try traditional Waldorf salad with a lowfat mayo?

Part of the fat also comes from the nuts involved -- you could omit them. OR keep them in remembering that they're full of good stuff for your bod.

I was flipping through the Better Homes and Garden Low Calorie Low Fat Magazine today (sorry CL) and came across this recipe:

Lightened Waldorf Salad:

2 cups cubed fresh pineapple or one 15 1/4 ounce can pineapple chunks (juice pack),drained
2 medium apples and/or pears cored and coarsley chopped (2 cups)
1/2 cup thinly sliced celery
1/2 cup halved seedless red grapes
2 kiwifruits, peeled, halved lengthwise and sliced
1/3 cup fat free mayonnaise dressing or salad dressing
1/3 cup fat free or low fat lemon yogurt
1 tbsp honey
2 tbsp toasted walnut pieces
Flowering kale or lettuce leaves (optional)

Toss together fruit in a large bowl. Stir together the mayo or salad dressing, yogurt, and honey in a small bowl, fold into fruit mixture. Cover and chill for up to 6 hours. Just before serving stir in toasted walnuts. Serve on flowering kale or lettuce leaves, if desired. Serves 6-8 side dish servings.

I make a waldorf that is really nice for brunch or with quiche.

Diced apples
Diced celery
Diced walnuts
Yellow raisins
Plain yogurt sweetend to taste with honey
