What a joyful day! I have discovered a food product that my husband enjoys(not too common an occurance). I purchased some dried cantaloupe at my farmers market and he has already devoured half the container while asking me when I can get some more.

I was wondering if the vitamin content in dried fruits/vegies are the same in regular fruits and vegies. Does the dehydration get rid of all the good nutrients?

Hi Susann,

Because it's dehydrated, dried fruit is quite a bit more calorie-dense than fresh fruit. I don't believe that the nutrients are significantly affected by the process (please correct me, someone, if I'm wrong), but dried fruit can have added sugars.
