Anyone got a good, light, recipe for dirty rice - Louisiana style?

The Louisiana thread got me in the mood for a cajun meal this weekend. I'm going to make a blackened red snapper.

I looked for you, and didn't know exactly what dirty rice was and had no luck on epicurious. However, there are several on FoodTV.com But search for just "dirty rice". They all seem to have chicken livers or gizzards in them. But at least there were several to choose from!

If you type "cajun and dirty and rice and recipe" on yahoo.com, you'll get a bunch of recipes under web page matches.

I have not personally tried to make dirty rice so I have nothing to recommend. I have used the Zataran's mix and I love it :o

I've used Zataran's too and really love it. However, since DBF has high blood pressure, salt has become an issue, so I'm trying not to use preprocessed and prepackaged foods as much as possible.

Thanks for the info. I'll do an online search and see if I can't lighten up the recipes I find.
