Does anyone have any good recipes for cold soups, especially fruit soups? I had this amazing cold pear soup once and would love to find a recipe for it or at least one I could modify and test.

This was a recipe we made for a neighborhood dinner club we're part of. It's from Provencal Light by Martha Shulman & it's also very easy.

RHUBARB AND STRAWBERRY SOUP

3-3 1/2 pounds rhubarb stalks, sliced
1 1/2 pounds strawberries, hulled
1/2 - 3/4 cup mild-flavored honey, such as clover or acacia
3 cups plus 1 tbsp. fresh orange juice, chilled
Fresh mint sprigs for garnish
1/3 cup water

Combine the rhubarb, honey, and water in a large non-reactive saucepan & bring to a boil. Reduce the heat & simmer until the rhubarb begins to soften, about 10 minutes. Add half the strawberries & continue to cook, uncovered, stirring often until the mixture is thick & compote-like, about 25 minutes. Remove from the heat & allow to cool slightly.
Transfer the compote to a blender or food processor and puree until smooth. {Ralph’s aside: This might be a GREAT place to use a stick blender that’s popped up in a couple of recent threads!} Pour into a bowl or container & chill for several hours or overnight.
A few hours before serving, slice the remaining strawberries and toss with 1 tbsp. of orange juice. Shortly before serving, stir the remaining 3 cups orange juice into the soup.
Ladle the soup into bowls & spoon in sliced strawberries and some of their juice. Float a sprig of mint in each bowl & serve.

Julie-A while back, I posted a creamy tomato soup (cascadillo, I believe it was called). Try to do a search. If you can't find it, let me know and I will post it. I know it is not exactly what you wanted, but it is yummy!

Cold Plum Soup


This beautiful fruit soup makes a sophisticated dessert for an elegant summer dinner party.

1/2 cup frozen apple-juice concentrate
1 pound plums, pitted and coarsely chopped
3 tablespoon white wine
1 cinnamon stick

1 1/2 cup plain nonfat yogurt

Estimated Cooking Time: 1 hour 5 min.

1. In a large heavy saucepan, bring apple-juice concentrate to a boil. Reduce heat to low, add plums, wine and cinnamon stick, cover, and simmer until the plums are tender, about 15 minutes. Discard the cinnamon stick.


2. Transfer the mixture to a blender and puree until smooth. Pour into a bowl and whisk in yogurt. Cover and refrigerate until chilled, about 45 minutes.

Cold Fruit Soup


Fruit soups have been a favorite of Eastern Europe for a long time, but with the advent of travel and emigration, the practice of preparing these soups has spread to people in other parts of the world, such as the German settlers in Minnesota.

1 pound fruit, ripe, apples, cherries, or any fruit
9 cup water
1 tablespoon cornstarch
1/2 cup apple juice, or other fruit juice
2 tablespoon granulated sugar
2 tablespoon fresh lemon juice
1/2 cup dry white wine

Estimated Cooking Time: 40 min.

1. Peel, core, or seed your fruit of choice as appropriate. Chop into pieces.


2. Set a small portion of fruit aside in the refrigerator for garnish.


3. Cook the rest of the fruit in the water for about 15-20 minutes (depending on the fruit) until soft. Remove from the heat and allow to cool a little, then pur,e in a blender or push through a sieve, reserving the juice.


4. Blend the cornstarch with the fruit juice or water. Put the fruit pur,e in a saucepan and bring to a boil. Stir in the blended cornstarch and mix until smooth and blended into the hot soup. Stir in the sugar, lemon juice, and wine. Turn off the heat and allow the soup to cool. Refrigerate until chilled. Serve cold, garnished with the reserved fruit.

Hi Julie O! I think this is the Julie from the CL club in Indianapolis? This is Andrea from the club, are you going to make one of these delicious recipes for our next gathering? They all sound delicious, good luck and see you next time. Hopefully I've got the right Julie!

Yes, Andrea, it's me! I thought I'd try the list for a cold dessert soup. I'll probably try modifying one of these to make a pear soup. I'll have to try some of these, though. They look so yummy!
