Last summer a friend and I drove from miami to washington dc. on the way there we stopped at a barb q place in south caralina. The sauce they used was a musturd based sauce. i told him i would ask around. Does anyone have any idea how this sauce is to make. i would like to surprise him. Thanks matt

Matt-I believe I can help you out! I have a South Carolina mustard sauce that is out of this world. It is also, sadly, at home-I will post it later today.

If you travel south from North Carolina you will wander into mustard country. Here barbecue sauces are thick and yellow (orange sometimes).
Sauces made from mustard are perfect for pork. In fact this is the sauce of the South Carolina Pig-Pickin'. These sauces are prepared and set out for the diners to dip into as they pull smoked bits of pork from the whole hog.

As with vinegar, which is frequently used by its self, mustard is more than just a sauce. When preparing Ribs try applying a thick coat of simple prepared yellow mustard over the surface of the ribs the night before you smoke them. You will experience a new level in ribs. Whereas tomato sauces can burn on the surface of foods, mustard can be applied at anytime during your smoking or grilling.

If you plan on mixing up a mustard barbecue sauce remember to cook it thoroughly and let it sit for a while before you plan to serve it. Like tomato based sauces, mustard sauces need time and heat to blend the flavors

Sweet Mustard Barbecue Sauce
1 cup prepared mustard
1/2 cup molasses
1/4 cup cider vinegar
1/4 cup honey
1 tablespoon oil
1/4 teaspoon powdered oregano
1/4 teaspoon powdered thyme
1/4 teaspoon ground black pepper
1/4 teaspoon cayenne

Combine dry ingredients in a saucepan. Add enough vinegar to make a mixable paste. Mix well. Place over high heat and add remaining ingredients. Bring to a boil, stirring constantly. Reduce heat and simmer for 10 minutes, stirring occasionally.

Big Daddy mustard BBQ sauce
"This is Carolina style barbecue sauce, meaning that it is vinegar and mustard based, as opposed to the ketchup and molasses based sauces of the mid- and southwest. It combination of sweet and tangy flavors bring out the absolute best in grilled pork or chicken."

1 C prepared yellow mustard
½ C sugar
¼ C light brown sugar
¾ C cider vinegar
¼ C water
2 T chili powder
1 t black pepper
1 t white pepper
¼ t cayenne
½ t soy sauce
2 T butter
1 T liquid smoke (hickory flavoring)

Mix all except soy, butter and smoke. Simmer 30 minutes. Stir in remaining ingredients and simmer for 10 more minutes.

The sauce you probably have is Maurice's. Maurice Bessinger owns a chain of barbecue places here in Columbia, and uses a mustard-based sauce. Although almost every Columbia barbecue places makes mustard-based sauce, I don't know of another restaurant that bottles it for sale. Here is the link to his web site: http://www.mauricesbbq.com/.
I would like to note something here. Although Maurice Bessinger makes a mean barbecue sauce, many people here in Columbia (including me) will not patronize his restaurants as he has some unfortunate racist beliefs. He recently has caused considerable controversy by flying huge Confederate flags in front of his establishments. So -- I give you the information as it probably is the only source for good, South Carolina mustard-based sauce. However, I can't promote Maurice Bessinger without reservations.

South Carolina mustard sauce
3/4 cp prepared mustard
3/4 cup red wine vinegar
1/1/2 tbs margarine
2 tsp. salt
1 1/4 tsp black pepper
1/2 tsp tobasco sauce
1/2 tbs worcestershire sauce
1/4 cup granulated sugar

In medium saucepan, combine all ingredients. Mix well. Simmer 10-15 minutes on low heat. Let stand at room temp. 1 hour. Can be used as a baste or table sauce.

Makes 1 1/2 cups per tbs 20 calories, 1 gram fat 252 mg sodium
