For all of you who helped me decide on my menu for the light cooking class I taught, I wanted to let you know that it was great. I had four women (luckily, that I know and like!) come to my house and I cooked them dinner and gave them the recipes and talked about cooking light. Everything that I made was from CL and they loved everything! I started with the Endive with Goat Cheese and Walnuts. For dinner, we had the BBQ Roasted Salmon with Honeyed Apple Slaw and Honey Whipped Sweet Potatoes. For dessert, we had Peach Blueberry Cobbler (without the peaches). They were thrilled with the recipes. In fact, one of my friends has never liked salmon and she loved this recipe! She says she will make it herself.
I wanted to thank all of you for your suggestions. I had so much fun doing this. I would recommend to all of you. I did it as part of a fundraiser for my son's elementary school.
