I just wanted to say that we finally tried this recipe from the June issue and it was very good! A different and interesting way to do pork.

A special note to Runnerkim and Peggy (I think that's who posted on the first thread) - I read the original thread and you were referring to how big of a can of chilies to use. The recipe calls for "1 drained canned chipotle chile in adobo sauce" which I take to mean 1 chili, not one can.

Runnerkim - that could explain why it was too hot for you if you used a whole can!! I have to say that I thought it could use more than just one chili (I stuck to the recipe since I don't like things overly spicy), but a whole can would certainly be overwhelming!

We enjoyed the Pork chops. Although the President and Vice-President of the local Loud-mouthed Picky Eaters Union didn't want the Chimchurri sauce even on the table for fear it would somehow end up on their plates. I did increase the chilies to two but we really love spicy food. Since there were so many left I simply made the same recipe using chicken breasts about 2 days later (minus the sauce)and they were tasty, too!

I just saw this post and I do believe you are right!!! My CL supper club made this early in the summer and I had posted the question about the size of the can. Interestingly enough, we ended up using the an entire small can of the chipotle chiles to marinate the pork in. They came out delicious, even for me, and I don't like really spicy food. One of my group members made them later at home and used two small cans of the peppers and even like them better! Isn't it funny how we all have different tastes.

I do appreciate you clearing this up for me. Now that I realize they only mean "one" chile in these recipes I may be more adventurous about cooking more with chipotle chiles!! Can't wait to enlighten my CL group. We are meeting Saturday night.
