View Full Version : Need Dessert Suggestions

I am looking for suggestions for a non-chocolate based dessert to make for my husband's birthday - preferably some sort of ice cream pie with caramel, pecans, maybe coffee ice cream could be involved, and maybe heath bar pieces on top or throughout. Something with Kahlua might be nice, too. I have an idea of what I want, but I just can't seem to find a recipe to fit. Any suggestions?

I have a recipe from Bon Appetit for a Kahlua Mocha Parfait Pie, it's made in a 10" pie pan. Let me know if you'd like it posted.

The CL Search feature has a recipe for a frozen Butterfinger pie. It calls for vanilla frozen yogurt (I used low-fat ice cream since it was on sale), a peanut buttery sauce, and butterfinger bars. It got raves plus it was easy. The only chocolate is from the butterfinger bars. It's so yummy!

Kahlua Mocha Parfait Pie
from Cooking with Bon Appetit, c1986

7oz sweetened flaked coconut
4 oz pecans, finely chopped
2 tbs all purpose flour
1/2 cup (1 stick) butter, melted

3 pints mocha chip ice cream, slightly softened
whipped cream
1 cup Kahlua
grated semisweet chocloate

Preheat oven to 375º. Combine coconut, pecans and flour in large bowl. Blend in melted butter. Press mixture into bottom and sides of 10-inch metal pie pan. Bake until golden brown, about 10 min. Cool crust completely.

Pack ice cream into crust. Freeze until firm. Top with whipped cream. Sprinkle with grated chocolate. Cut pie into 8 wedges. Pour 2 tbs Kahlua over each piece.
