I recently swithched from margarine to butter in baking. Now I am having problems with cakes sticking to the pan even though the pans were coated with cooking spray. What is going on? Any solutions?

I don't know why your cakes are sticking, but can I make a suggestion? Parchment paper works wonders. Just cut it to the size of the bottom of your pan, coat the pan and the parchment paper with cooking spray and you should have no sticking problems.

I use parchment paper as well, but I also flour the pans after they are greased or spray.

In some recipes I will also flour the pan. Actually I have used Pam then dust with flour and things tend to come out of the pan better.
