Hey all you great cooks. I am looking for a recipe for chicken salad. An acquaintance makes it but won't share the secret. It has chicken, celery, green onions, almonds, green and red peppers, grapes, spiral pasta, mozzerella cheese maybe, and I can't place the dressing, perhaps a mayo base, anyway any thoughts would be greatly appreciated. thanks!!
I've never understood why someone won't share a recipe or why (I'm told) folks will change a recipe when they give it out. Unless you have the secret sauce recipe, or the original coca-cola secret. I consider a recipe request a compliment and an opportunity to share something I enjoy.
I've made chicken and pasta salads, and chiken salad with grapes, even almonds,but not all three together. Don't have a recipe for you since it's one of those things I throw together with what I have and what I feel like at the time, but hope this will bring the post back up where it might be seen again.

I recall that Cooking Light had a recipe called a Grape Chicken Salad a couple of years back. I am far from sure that it s what you re looking for, based on your description, but thought I would mention it anyway. I can locate the recipe and post it if you re interested.

The one I make is basic and I have no specific amounts. It's based on what my mom made when I was a kid. Again, very basic... chicken, light mayo, boiled eggs, onion, celery, s & p. BUT! I will try to get my sister Connie to post one she made a few years back at a bridal shower. It was fabulous. She made I think a chicken and a tuna salad, and I think the chicken one had grapes and or nuts in it? (And come to think of it I'd like the recipe!!) And you actually look like you've got a nice start with the ingredients you have listed. I bet you could wing it! Here are 2 recipes I have for "Chicken &

#1- 3/4 c. non-fat mayonnaise
1 T. sugar
1 t. grated lemon peel
1 T. lemon juice
1/2 t. ground ginger
1/4 t. salt
#2- 1/4 c. non-fat mayonnaise
1/4 c. plain low-fat yogurt
1 T. honey
1 t. lemon juice
1/2 t. celery seed

When talking to my sister to ask her to post her chicken salad recipe, she reminded me that early this year I made a really good one. Sorry I forgot!
Here it is and it is from Cooking Light:
Greek Chicken Salad
3 cups chopped cooked chicken breast (about 12 ounces)
1 cup diced seeded peeled cucumber
1/2 cup (2 ounces) crumbled feta cheese
1/4 cup chopped fresh parsley
1 tablespoons sliced pitted kalamata olives
3/4 cup plain fat-free yogurt
1/2 cup light mayonnaise
1 tablespoon dried oregano
3 garlic cloves, minced
4 (6-inch) pitas, each cut in half
8 Boston lettuce leaves
1. Combine first 5 ingredients in a large bowl. Comnbine yogurt, mayonnaise, oregano, and garlic in a small bowl. Pour over chicken mixture; toss well. Cover and chill 2 hours
2. Line each pita half with a lettuce leaf, and fill with 1/2 cup chicken salad. Yield: 8 servings.

I did find a couple other recipes you might like, though:
Confetti Pasta Salad with Chicken (May 2000, p. 188): this one has, among other ingredients, dry white wine, low-fat yogurt and light mayonnaise, cider vinegar, short tube-shaped pasta, celery, green and red bell peppers, and carrots. You could add the grapes, green onions, cheese, etc. to adapt this one to be more like what you had.
Chicken-Pasta Salad (July/August 1998, p. 136): this one includes farfalle, carrots, celery, green peas, red bell pepper, lemon juice, oil, Dijon mustard, and parsley. No mayo base, but, again, you could experiment, since you seem to have a pretty good idea what you re aiming for.
Let me know if you would like either or both posted, since I do have these right at hand! Again, sorry I couldn t locate the other recipe for you.

My pleasure! Here it is:
Chicken-Pasta Salad
4 cups cooked farfalle (about 8 oz. uncooked bow-tie pasta) or any short pasta
2 cups diced ready-to-eat roasted skinned, boned chicken breasts (about 2 breasts)
3/4 cup sliced carrot
3/4 cup sliced celery
1/2 cup frozen petite green peas, thawed
1/2 cup diced red bell pepper
3 tablespoons extra-virgin olive oil
3 tablespoons fresh lemon juice
2 tablespoons minced fresh parsley
1 tablespoon Dijon mustard
1 teaspoon grated lemon rind
1 teaspoon dried tarragon
1/4 teaspoon salt
1/4 teaspoon black pepper
1. Combine the first 6 ingredients in a large bowl. Combine the olive oil and remaining ingredients, and stir mixtrue well with a whisk. Drizzle vinaigrette over salad, and toss gently. Cover salad and chill. Yield: 6 servings (1 1/3 cups per serving).
Per serving: 270 calories (28% from fat); 8.5 g fat (sat 1.4 g, mono 5.4 g, poly 1.1 g; protein 14.6 g; carb 33.5

When I pulled out the issue to copy the chicken-pasta salad for Jeanne, I happened to flip over the page from that recipe, and there it was - the famous A Grape Chicken Salad recipe! It was indexed under sandwiches, and not under salads or poultry, so I hadn t been able to find it. Here it is, though obviously, being a sandwich filling, it is quite different than the salad you had. Anyway, good luck with your quest!
A Grape Chicken Salad
2/3 cup chopped celery
1/2 cup light mayonnaise
2 tablespoons lemon juice
1/4 teaspoon salt
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
1/8 teaspoon dried thyme
1/8 teaspoon black pepper
2 1/2 cups cubed cooked chicken breast (about 1 1/2 pounds)
1 1/2 cups seedless green grapes, halved
16 (1-oz.) slices white bread
Combine first 8 ingredients in a large bowl; stir in chicken and grape halves. Spread 1/2 cup chicken salad over 8 bread slices; top with remaining bread slices. Yield: 8 sandwiches.
Per sandwich: 364 calories (24% from fat); 9.8 g fat (sat. 2.2 g, mono 3.1 g, poly 3.6 g); 31.4 g protein; 35.7 g carb

I have a recipe from an old friend of a grape/almond chicken salad.
She would mix chicken with grapes, almonds, mayo, and sour cream. The mayo and the sour cream make a good combo, the sour cream makes the salad very creamy.
This salad is great in pita bread.

How funny is this? I had a hankering the other day for chicken salad with grapes and I did a search online and found CL's A Grape Chicken Salad. I made it a few days ago and found it quite delicious. My husbad liked it to. I used red grapes vs. green as that is what i prefer.
