I threw out all my issues after assuming all recipes were on-line. Unfortunately I went on-line tonight to look up a recipe I made probably 8 months ago. It was amazing! I was looking forward to making in tomorrow night for a small dinner party. DOES ANYONE HAVE BACK ISSUES. I AM LOOKING FOR A HALIBUT RECIPE. IT WAS SOMEWHAT COMPLICATED, SERVED ON TOP OF GREENS, HAD A CITRUS ZEST IN IT, MAYBE PINE NUTS AND CUMIN. Please if this rings a bell and anyone has it I would be most grateful!

I see one from April 1999 called Halibut with Citrus Couscous, Red-Onion Marmalade, and Cilantro-Almond Sauce. Is that the one? Since you need it for tomorrow and it is already late here on the West Coast, I will go ahead and post it for you just in case.

Marmalade:

1/4 cup fresh orange juice
1/4 cup port or other sweet red wine
2 T sugar
2 T red wine vinegar
1 cup vertically sliced red onions
1 teas grated orange rind
1/8 teas salt
dash of black pepper

Sauce:

1 1/2 cups chopped fresh cilantro
1/2 cup sliced almonds, toasted
1/4 cup finely chopped seeded jalpeno peppers (about 2 large)
1/4 cup lime juice
3 T water
2 T honey
1 teas ground cumin
1/4 teas salt
1/8 teas pepper
2 garlic cloves, peeled

Couscous:

3/4 cup water
1/4 teas grated lemon peel
1/4 teas grated orange rind
2 T fresh lemon juice
2 T fresh orange juice
1 teas chile paste (optional)
1/4 teas salt
1/4 teas curry powder
1/4 teas bleck pepper
2 cloves garlic, minced
1 cup uncooked couscous

Halibut:

1 T curry powder
1/2 teas salt
4 (6-oz) skinned halibut fillets (about 1 inch thick)
cooking spray
2 cups gourmet salad greens

1. To prepare marmalade, combine first 4 ingredients in a small nonaluminum saucepan. Bring to a boil; cook until reduced to 1/2 cup (about 5 minutes). Add onion and 1 teas orange rind; cook 5 minutes. Sprinkle with 1/8 teas salt and dash of pepper; set aside.

2. To prepare sauce, combine cilantro and next 9 ingredients in a blender or food processor; process until smooth.

3. To prepare couscous, bring 3/4 cup water and next 9 ingredients to a boil in medium saucepan; gradually stir in couscous. Remove from heat; cover and let stand 5 minutes. Fluff with a fork.

4. To prepare halibut, combine curry powder and 1/ teas salt. Rub fillets with curry mixturre. Lightly coat with cooking spray. Heat a large nonstick skillet over medium-high heat until hot. Add fillets and saute 4 minutes on each side or until fish flakes easily when tested with a fork. Place 1/2 cup salad greens on each of 4 plates, and top each serving with 1 cup couscous. Arrange fillets on couscous, and top each with 2 T marmalade. Spoon 1/4 cup sauce around each serving. Yield: 4 servings
