View Full Version : Looking for Jalepeno Corn-Corn Bread Recipe

Lately, I've been on a bread/loaf fix. I've tried the Jamaican Banana Bread (loved it), the Spicy Pumpkin Bread (very good) and the Carrot-Raisin bread (just OK).

Now I'm looking for the Jalepeno Corn - Corn Bread. If someone has the recipe, I would be grateful if you could post it.

Jalapeno Corn Bread
from The Best of Cooking Light

Butter-flavored cooking Spray
2 tsp vegetable oil
3/4 cup all purpose flour
1 cup yellow cornmeal
1 tbs sugar
2 tsp baking powder
1 tsp salt
1 cup frozen whole-kernel corn, thawed and drained
1 cup low-fat or non-fat buttermilk
1/3 cup fat0free sour cream
1/4 cup chopped fresh cilantro
1 tbs chopped seeded jalapeno pepper
2 large eggs, lightly beaten

1. Preheat oven 400º.
2. Coat 9 inch cat-iron skillet with cooking spray; add 2 tsp oil, and place in oven for 8 minutes.
3. Lightly spoon four into a dry measuring cup; level with a knife. Combine flour and next 4 ingredients in a large bowl. Combine corn and next 6 ingredients in a bowl; stir well with a whisk. Add to flour mixture, stirring until moist. Bake at 400º for 25 minutes or until a wooden pick inserted in center comes out clean. Remove from pan; cool completely on a wire rack. Yield 9 servings (serving size: 1 wedge).

I love Jalapeno Corn bread! I tried it at a restaurant once and was surprised at how good they were! I make a really easy recipe of this because I buy the boxed corn bread, I know I'm terrible but it turns out just as good, I think!

It's not cornbread, but if you enjoy making bread, this one is awesome. Everyone loves it.

Pumpkin Swirl Bread

8oz cream cheese, softened
1 beaten egg
1/4c. sugar
1c. pumpkin
1/2c. melted butter
1 1/2c. sugar
1 beaten egg
1/3c. water
1 3/4c. flour
1tsp cinnamon
1/2tsp salt
1tsp baking soda
1/4tsp nutmeg

Mix first three ingredients, cream well and set aside. Mix pumpkin, melted butter, sugar, one egg, and water. Now add dry ingredients to pumpkin mixture. Pour about half of pumpkin into greased loaf pan. Pour cream cheese mixture on top and swirl with fork. Top with remaining pumpkin mixture. Bake at 350* for one hour. Cool before slicing

Hi again,

I'm just making it now, but noticed that the instructions say to mix the flour with the other ingredients, but the posted recipe doesn't mention flour. Does anyone know how much?

OOPS!Sorry-typing lists is not a strong suit.
the recipe calls for 3/4 cup all purpose flour-hope it's not too late!

I too make cornbread from a box. But of course, I add my own personal touches. I don't like cornbread, but my family says this is a real winner.
2 boxes of Jiffy Cornbread Mix
1 can of creamed-style corn
1 package of taco-seasoning
I know this seems like cheating, but as a very busy mom, when I am in a hurry, it works. I don't often use items from a package, but sometimes it's a trade-off. I
enjoy good tasting, healthy food, but I also need to balance my time.
One more note, I like to cook my cornbread in a cornstick mold. It is a perfect serving size, and my children feel special getting their very own little stick.
