The October issue has a time saver (p. 148) regarding roasting garlic and freezing it for future use. I understand how to roast garlic, but didn't understand the CL description for freezing. I read it that you squeeze the garlic from the cloves before freezing, but then I can't figure out what the 'prying off cloves' after is all about. Has anyone tried this? I'm a rookie and need all the help I can get! Thanks!

My wife thought this curious, too!
I think what they mean is to squeeze the individual cloves from the papery husks of the garlic head, keeping them as whole as possible. Then, put them in a bag to freeze & during the freezing, they glom together! When you need a clove (or 2 or 3), pry or pull the requisite amount off that now amorphous blob-o-garlic!
If I'm wrong, maybe one of the CL administrators who sees this posting will comment as to what was meant in the article.

I agree - Ralph I think you're right.

I have a suggestion, however. Why not try fast freezing each clove on a cookie sheet before transferring them to a bag. That way, they will stay more individually frozen and not "glom" together http://www.cookinglight.com/bbs/smile.gif

When I read that article I thought it meant to lay them out in the baggie so that they don't touch each other (the part about lying the baggie flat) so it would be prety much the same as the cookie sheet method except you wouldn't have to transfer once frozen. You would however have to pry off the bag to use any. So I guess if you could remember 30 minutes later to remove the cookie sheet from the freezer that would probably be easier to use down the road...can't tell you how many times I have left things to fast freeze and gone back days later to find them still sitting there!

I'm so glad that I wasn't the only one confused by this tip. I'm glad to better understand it now! I'm planning on getting some garlic and peppers at the farmers market and roasting them at the same time. Then freeze them seperately. Thanks to everyone that cleared up the tip on the garlic!

This is a very old topic, but I seem to have loaned out my Oct. issue and would like the instructions given for roasting garlic ahead & freezing it.
Can someone help ? TIA
