I have a dinner club (unfortunately, not light!) tomorrow night. I need caramel sauce for a garnish. I was wondering if anyone has a good CL recipe. I thought they did a whole article on caramel sauce once, years ago, but I can't find it. Does anyone know anything about this?

I found a site with sauces to give as gifts just the other day! Here is the caramel sauce they posted, I hope it's what you are looking for.

CARAMEL SAUCE
1 cup butter
2 cups sugar
2 teaspoons fresh lemon juice
1 1/2 cups whipping cream
MELT butter in a heavy saucepan over medium heat; add sugar and lemon juice, and cook, stirring constantly, 6 to 8 minutes or until mixture turns a deep caramel color. Gradually add cream, and cook, stirring constantly, 1 to 2 minutes or until smooth. Remove from heat, and cool. Pour into hot sterilized jars, and seal. Store in refrigerator up to 1 month. Yield: about 3 cups.
Prep: 5 min.; Cook: 10 min.

There is a CL recipe for butterscotch sauce in Nov 00, page 184.

Here is one I have in my files. Not sure where I got it. Could have been on this board. I haven't tried it.

HOT CARAMEL SAUCE (in database)

1 cup sugar
1/2 cup boiling water
2 tablespoons cream

Put sugar in heavy pan and heat slowly until melted and browned, stirring constantly
add boiling water slowly, stirring vigorously cook until syrupy and all the browned sugar has melted. Remove from heat and add cream.

Serve hot or cold.

If too thick when cold add more cream and stir. Makes about 1 cup.
This is good on Apple Pancakes and Vanilla Ice Cream. It is low fat.

Norma, your recipe looks great. I think I may try that one. I did end up buying caramel recipe for a dinner club last night. But, I may have to try this recipe anyway. Thanks.
