I am wanting to make the Fresh Apple coffee cake in CL complete tomorrow morning, and have everything on hand except the 8 oz carton of substitute, which is the equivalent of 4 eggs. As I am just out of the shower after a workout, I would rather stay home and relax and not run out to the store for that...call me a wuss. Would I be okay with, say 4 egg whites and 1 egg? I have plenty of large eggs on hand, just no substitute for a change. What do you think?

My guess would be to use 4 eggs.

I never use egg substitute. I believe egg substitute is basically made up of egg whites, and I usually measure an equal volume of egg whites (however much it takes to get 1 cup). It's worked perfectly with all the recipes I've tried.
