Braised Eggplants and Potatoes w/ tomatoes, olives and capers

i made this yesterday and it was delicious! i will definitely make it again - but when i have the time - it was very time consuming - it took about 3 hours to do everything. but then again i probably wasn't as prepared as i could have been because i knew i had all afternoon - regardless it was worth it!

No wonder it took you so long. Those instructions are long!! It does sound good, though.

I agree. Took a really long time to make, but it was definitely worth it. I had my in-laws over for lunch and they loved it!!! Will make it again... but will start working on it the day before to cut prep time.
