the recent thread on polenta reminded me of a question i have had for a while - i have only made polenta a couple of times - but each time it seems to pop everywhere - burning me when i stir it. i even remember turning the heat down to simmer and it still popped - is this normal?

I have had the same experience with the popping of polenta. I thought it might have had something to do with using gas heat. I just turn the heat way down and stir a lot. A little more hands-on, but I think it's worth it.

Popping (or plopping) polenta kinda comes with the territory. What I do is just keep the heat low, keep stirring, and use a deep pot and a long-handled spoon. http://www.cookinglight.com/bbs/wink.gif

I've had the same problem. I just turn the heat down a bit, wrap a dish towel around my hand and wrist and keep stirring! Good luck!
