I want to make a recipe that calls for flounder fillets, but I don't often see flounder in my fish shop. Would another fish work?

Easily Filet of Sole. I have actually always thought they were the same fish with different names (I have since learned this is not true - however they are close enought to use interchangeably)

Have nothing to say re fish, but wanted to tell you how much I agree with your quote - I too hope that Paradise will be a never-ending library. . .

Cook's Thesaurus also suggests cod, orange roughy, or haddock (in addition to sole) as a substitute for flounder. I'll admit, though, that flounder is my FAVORITE fish and I have yet to find an equivalent substitute. :(

The shop had both cod and sole and I chose the sole. It was absolutely delicious--such a delicate flavor, I thought.
The recipe was Gingered Flounder from the CL Five-Star cookbook, although I was short on ginger so mine was pretty mild. Still, it was delish.
