I must confess: my original intention was to make the Enchilada Chicken Casserole, but this cold I am fighting has left me with more ambition than energy and when I was faced with an hour of prep- chopping, mincing, shredding, thickening, cooking, arranging- followed by 45 minutes of baking, my head just started to pound. It was also my last dinner with DH for a week and he was due home, for only an hour in between classes, in 30 minutes.
I was delighted to spy the Herbed Chicken Piccata on the facing page! Dinner was placed on the table as DH walked in the door.
This was very simple and tasty. I am awaiting my Basil from Penzeys, so I used a combination of dried Tarragon and fresh Rosemary instead- which is preferable IMO. The chicken was so moist and tender. Instead of chicken broth in the sauce, I used dry sherry (watered down a bit). It was lemony-tangy- great with the generous helping of rosemary and garlic in the bread-crumb crust.
I boiled baby red potatoes for DH and I finished off leftover roasted Danish squash. I also steamed up some broccoli.
A simple, easy, satisfying meal. TG for CL! I'll do the casserole when I return...
Now, on to a hot bath and chamomile tea.
