View Full Version : Side dish to go with fish?

I'm looking for a low-fat side dish (potatoes, rice, pasta....) to serve with this delicious recipe I have for Dijon Cod. The strongest flavours are dijon mustard and dill (very little fish taste to it), and I'm stuck!

When I make fish, I find I need something a little more filling than most side dishes. I usually make those Zatarin's (sp?) beans and rice. I like the black beans and rice the best. Quick and easy, and I always leave the extra oil and butter out and it taste just fine.

While not a starch, my favorit "side" is baked asparagus. It is baked in a hot oven after being rolled in olive oil and minced garlic. Then sprinkle with balsamic vinegar, salt, pepper and parmesean cheese, it's broiled for a minute or two. It so crunchy and so green, it's one of the few dishes that I'm glad my children don't eat-more for me http://www.cookinglight.com/bbs/biggrin.gif

I too have a love affair with asparagus. I usually toss mine with a bit of olive oil and lemon and grill them. Divine!
However, since you seem to be looking for a starch accompaniment, these roasted red potatoes would be an excellent choice -- and would lend a bit of fall color:
ROASTED RED BLISS
1 lb small red potatoes
1/4 cup extra virgin olive oil
1 head garlic broken into cloves and peeled
salt and freshly ground black pepper
1/4 cup water
1/4 cup freshly grated parmesan cheese
2 T chopped parsley
Preheat oven to 400 degrees F. Scrub the potatoes well and cut them in half. In a bowl combine the potatoes with the olive oil, garlic, salt and pepper, tossing to coat. Arrange the potatoes in a roasting pan in
a single layer and sprinkle with 1/4 cup water. Roast the potatoes for 45 minutes or until the potatoes and garlic are tender and golden brown. In a serving bowl toss the potatoes and garlic with the Parmesan and parsley.
Yield: 4 servings

Our stand-by side with most fish is basmati rice. It is so tasty that it doesn't need any seasoning, but for a little more color you could add chopped parsley or cilantro.

My favorite starchy side dish to accompany fish is couscous. It's so quick and easy to prepare, and you can easily spice it up to suite your tastes.

Actually, I would suggest trying a recipe from a Grey Poupon advertisement--which has appeared, among other places, in CL. You may be able to find it--it calls for Italian seasoning, dijon mustard (go figure http://www.cookinglight.com/bbs/smile.gif), olive oil, and potatoes. You then bake them.
If you can't find it in your back issues of CL (or don't feel like looking http://www.cookinglight.com/bbs/smile.gif), I'll be happy to post it.

Oh, and I don't remember the nutritional stats, but I figured out that 1/8 recipe (it makes a lot) was 5 WW points. Not too bad...
Oh, I just realized you may not want 2 dijon mustard dishes together--but then again, it might be good. Hmm...
