My apologies ahead of time, I am sure I am repeating a popular thread question. I am attending a Holiday Cookie Exchange on December 9th, and I would like to know if anyone has any tried and true Cookie Recipes that they could share with me. I will need to make 8 dozen cookies and would like to cut out own "experimenting" I usually have to do ahead of time down to ensure great cookies. Thank you very much!

Actually, do a search under 'Cookies' and choose 1 month or sooner, and you'll get a lot.
The one that everyone likes is the caramel filled cookies:
Caramel Filled Chocolate Cookies
1 cup butter -- softened
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
3/4 cup unsweetened cocoa powder
1 cup chopped walnuts
1 tablespoon granulated sugar
48 ROLO candies
Beat butter or margarine until creamy. Gradually beat in white sugar and brown sugar. Beat in eggs and vanilla. Combine flour, baking soda and cocoa. Gradually add to butter mixture, beating well. Stir in 1/2 cup walnuts. Cover and chill at least 2 hours.
Preheat oven to 375 degrees F (190 degrees C).
Combine remaining 1/2 cup nuts with the 1 tablespoon sugar. Divide the dough into 4 parts. Work with one part at a time, leaving the remainder in the refrigerator until needed. Divide each part into 12 pieces. Quickly press each piece of dough around a chocolate covered caramel. Roll into a ball. Dip the tops into the sugar mixture. Place sugar side up, 2 inches apart on greased baking sheets.
Bake for 8 minutes in the preheated oven. Let cool for 3 to 4 minutes on the baking sheets before removing to wire racks to cool completely.
Yield: 4 dozen

Per Serving: 285 Calories; 14g Fat (48.0% calories from fat); 4g Protein; 30g Carbohydrate; 2g Dietary Fiber; 38mg Cholesterol; 165mg Sodium. Exchanges: 1 Grain(Starch); 1/2 Lean Meat; 2 Fat; 1 Other Carbohydrates.
My favorite spice cookie recipe is this one:
Mary's Grandmother's Spice Cookies
Cream together:
¾ C soft shortening (Crisco)
1 c sugar (brown or white)
Add:
1 egg
¼ C molasses
stir together:
2 c flour
2 tsp baking soda
¼ tsp salt
1 tsp cinnamon
¾ tsp ground cloves
¾ tsp ground cinnamon
Mix flour and shortening together and blend well. Chill overnight.
Preheat oven to 375º
Roll into balls the size of a quarter, then roll in sugar. Place on ungreased cookie sheets in the middle of the oven and bake for 9 minutes exactly. They won't look done, but they will be fine.
Makes about 3 dozen.

These are my favorite cookies and have gotten positive reviews on this board. You would only have to make two batches to have 8 dozen cookies!
Mom's Coconut Chocolate Chip Cookies

1 cup granulated sugar
1 cup shortening
2 large eggs
2 cups coconut
2 cups oatmeal
1 bag chocolate chips
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla extract
Combine ingredients in order listed.
Shape dough into tablespoon-sized balls and place on cookie sheets.
Bake at 350 degrees for 10-12 minutes until golden.

I've been in a cookie exchange for 11 or 12 years now. It's been the same friends since we started with the exception of one girl who moved to Atlanta. We have cookbooks of all our recipes from all the years. That Rolo cookie that was posted by beejayw1 was at our first party!! They're incredible!
I'm already in the process of trying to figure out which cookie to make for this year...and not repeat 5 or 6 recipes from each of the past 11 or 12 years!! I've copied many of the recipes in the links that have just been posted and will possibly pick a recipe from there.
Have a great time at your cookie exchange!! Our group used to ALL work together. We're now totally and completely at all different jobs now so our once-a-year get-together is something we all enjoy doing!

I know it's always risky to try a new recipe THE DAY OF a party, but it can be fun to live dangerously :) So at 1pm with my ever-helpful assistant (Tori the german shepherd) at my side, I started putting together the Caramel Filled Chocolate Cookies that everyone has been raving about.
I did add 1/2 tsp of salt to the recipe, plus a smidge more flour and cocoa...I put the dough in the freezer for about 15 minutes instead of the fridge for 2 hours. It came out PERFECT, very easy to work with. Tori complained that I was too neat and only dropped a few nuts....but I did let her lick off the beater. (YES I know, no chocolate for doggies...) Start to finish, not including cleanup, about 1.5 hours.
DH kiddingly said (with a very serious expression) "I don't think these are good enough to take to the party, they should stay home." smart alec :)
