Does anyone have an Indian Pudding recipe that they will share. It is a cold rainy day here in CT and it would be a great cozy dessert treat for tonight!

INDIAN PUDDING

5 cups milk 4 T butter
1/2 cup yellow cornmeal 1 t salt
1/2 cup sugar 1 t pumpkin pie spice
1/2 cup molasses

Reserve 3 c milk. Comine remaining ingredients in large saucepan. Heat to boiling, simmer 5 min till creamy, thick. Stir often. Pour into buttered 8 c baking dish. Stir in 2 more cups milk. Bake at 325 for 1 hour. Stir in last cup milk. Bake 2 hours more or until pudding sets. Serve w/ cream or ice cream. Enjoy!

Thanks for the recipe djoygirl, I can't wait to try it. I didn't know that cooking time was that long, looks like I will have to wait til Saturday. Hope the week goes by quickly.

My mother-in-law would die if she saw this post... she has this thing against Indian Pudding and picked on her mother for ordering it in a restaurant, citing that "no one has eaten that for at least 200 years!" Anyway, my husband & I like it, especially with a little vanilla ice cream or fresh whipped cream. Here's a recipe I found, I think in Bon Appetit.

Indian Pudding

2 cups milk
1/4 cup dark molasses
1/4 cup cornmeal
2 large egg whites
3 T. firmly packed brown sugar
1 T. butter, melted
1/2 t. ground cinnamon
1/8 t. salt
1/4 cup raisins

Preheat oven to 300 degrees. In a medium saucepan, combine the milk & molasses. Stir in the cornmeal. Cook, stirring constantly, over moderate heat for 5 to 6 minutes or until thick. Set aside.

In a medium bowl, combine the egg whites, brown sugar, butter, cinnamon & salt. Stir into the cornmeal mixture. Stir in the raisins. Spoon mixture into an 8" round baking dish. Bake for 45 minutes. Serve warm.

(Can be made up to 7 days in advance. Cover tightly and store in refrigerator. Reheat in water bath before serving.)

I think the raisins add a nice touch, but feel free to omit them if you're not a big fan. Enjoy!
