Just thought I'd share this recipe I came across tonight, and I happen to have just bought some yellow squash at the Farmer's Market today. I figure that I was meant to make this recipe again, and it is DELICIOUS. Hopefully it reaches some other squash or zucchini lovers out there!!
SUMMER SQUASH PANCAKES
3 C grated yellow squash or zucchini (about 3 small to medium)
1/2 t salt
1 clove garlic, minced
1/2 C onion, chopped finely
3/4 C shredded reduced fat cheddar
1 egg (I use egg beaters)
1 1/2 C reduced fat bisquick mix
1 C skim milk
Mix all ingredients together to make batter. Heat a little olive or canola oil in pan over medium to medium low heat and cook cakes like pancakes. Serve topped with salsa or plain.
Note: I think the yellow squash makes a prettier pancake! http://www.cookinglight.com/bbs/smile.gif I hope someone tries it, because you will love it!!!
I don't think this is strange at all. A few years ago, I found a zucchini "fritter" recipe that is very similar, except it has some salsa in the batter. It called for frying in a oil, but I cook them on a griddle, and we have them with more salsa and plain yogurt or lowfat sour cream. Very good.

I think this is Beth's recipe-I copied it previously. If it isn't Beth', it's another version for you. Haven't tried it but plan to this week.

Zucchini Fritters

4 cups zucchini -- grated
5 1/2 teaspoons salt -- divided
1 cup flour
1 teaspoon baking powder
1/2 teaspoon dried oregano -- (or 1 1/2 tsp fresh)
1/2 cup cheddar cheese -- grated
3 large eggs
1/2 cup salsa or picante sauce
1/2 cup onion -- chopped
1/4 cup chopped green chilies or other peppers -- to taste
1. Mix zucchini and salt in colander and weight with a heavy plate or bowl. Let drain for 30 min. Squeeze out any additional moisture by hand.
2. In a large bowl, stir together flour, baking powder, remaining 1 tsp salt. Mix in oregano and cheese.
3. In a second bowl, beat the eggs. Add the zucchini, salsa onions and peppers. Add the egg mixture to the flour mixture, stirring just enough to mix thoroughly.
4. Drop batter onto a heated non-stick skillet or griddle. (you may want to use cooking spray, but the oil for frying in the original recipe isn't necessary). Serve hot with additional salsa and non-fat plain yogurt or light sour cream.

I have to report:
I made these in a smaller version - 3" rounds and served them at a party last night and it was one of the favorties!! I was surprised but everyone wanted the recipe! Hope someone out there tries this recipe!! http://www.cookinglight.com/bbs/biggrin.gif
