Our cooking group is doing a pizza/Mediterranean theme supper for October and I need to take a salad. There are too in the October issue that seem to work with that theme, but I am open to suggestions.

Please look at the thread on Greek Food, I posted an awesome taboueli recipe, that is a salad everyone loves and should fit your theme and would be a great side mediteranean-sp?)

Someone posted in an old thread that they'd found their favorite Greek Pasta salad recipe they thought they'd lost (sorry don't remember who) - it's easier for me to re-post it than find that old thread. I really liked it
Greek Pasta Salad Chill 1 Hour+
Betty Crocker's Great Main Dishes Without Meat
4 cups cooked orzo pasta
2 cups thinly sliced cucumber
3/4 cup chopped tomato
1/2 cup chopped green bell pepper
1/2 cup chopped red onion
1/4 cup finely chopped fresh parsley
1/4 cup olive oil
1/4 cup lemon juice
1/4 tsp salt
1 can (15oz) garbanzo beans (chick peas) rinsed and drained
1 can (4 oz) sliced ripe olives or 1/3 cup sliced Greek olives (from deli)
1/2 cup crumbled feta cheese
Mix all ingredients except cheese in a glass or plastic bowl. Cover & refrigerate at least 1 hr to blend flavors. Top with cheese.
Makes 6 main-dish servings.
I also like to make something that I call Bruschetta Salad
Basically it's
Romaine Lettuce
Chopped Tomatoes
Chopped Basil
Mozzerella
Bread Cubes (day old bread, cut in cubes and dried in the oven for an hour) - you use more bread than you would for "normal" salad, this is a "bread salad"
I normally use a fat-free red-wine vinaigrette dressing.
