I'm looking for 2 muffin recipes to try:

1 using mandarin oranges

1 using maple syrup, preferably with oatmeal

Any suggestions?

Here are some:


Mandarin Orange Muffins

Ingredients:
1 (11 oz.) can mandarin oranges
1 1/2 c. all purpose flour
1 3/4 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
1/4 tsp. allspice
1/2 c. sugar
1/3 c. shortening
1 egg, slightly beaten
1/3 c. milk

TOPPING:
1/4 c. melted butter
1/4 c. sugar mixed with 1/2 tsp. cinnamon


Drain oranges well and pat dry while mixing batter. Mix flour, baking powder, salt, nutmeg and allspice. Cut in shortening. Add drained orange segments and mix lightly. Combine egg and milk. Add all at once to flour mixture and mix until flour is moistened. Spoon into greased muffin pan to about 3/4 depth.

Bake 20 to 25 minutes at 350 degrees. Remove from pan. While hot dip in melted butter, then roll in cinnamon sugar mixture.

MANDARIN ORANGE MUFFINS

1 1/2 c Flour
1 3/4 ts Baking powder
1/2 ts Salt
1/4 ts Allspice
1/4 ts Nutmeg
1/2 c Sugar
1/3 c Margarine
1 Egg, slightly beaten
1/4 c Milk
10 oz Mandarin orange tin, drained
TOPPING (optional)
1/4 c Melted butter
1/4 c Sugar
1/2 ts Cinnamon

Note: tin of broken segments is less expensive than
whole segments. About a cup of fresh orange pieces
could be used.

Sift flour with other dry ingredients. Cut in
Margarine. Combine egg and milk, and add all at once
to dry ingredients -- mix only until moistened.

Fold in orange pieces and break them up more if batter
seems to dry at first. Fill greased muffin tins 3/4
full.

Bake at 350F for 20 to 25 minutes.

Remove from muffin tins while still warm. Dip tops in
melted butter and sugar-cinnamon mixture. Makes 12
large muffins.

MAPLE OATMEAL MUFFINS

2 cups all purpose flour -- unbleached
1 cup oatmeal -- quick cooking
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup low-fat buttermilk
3/4 cup unsweetened applesauce
1/2 cup pure maple syrup
1/2 cup packed golden brown sugar
1/4 cup vegetable oil
1 large egg
2 teaspoons vanilla extract

Preheat oven to 400°F. Line twelve 1/3-cup muffin cups with paper liners. Combine first 6 ingredients in large bowl and stir to blend. Whisk buttermilk, applesauce, maple syrup, brown sugar, vegetable oil, egg and vanilla in medium bowl until well blended. Add to dry ingredients and stir just to incorporate (do not overmix).

Divide batter equally among muffin cups (batter will reach top of cups). Bake until muffin tops are golden brown and tester inserted into center of muffins comes out clean, about 28 minutes. Transfer to rack and cool.

Makes 12.

Per serving: calories, 231; fat, 6 g; cholesterol, 18 mg; sodium, 276 mg

Maple Tea Scones

Amount Measure Ingredient -- Preparation Method

1 3/4 cups flour
1 1/4 cup rolled oats
4 tablespoons dark brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup chilled butter -- diced
1/2 cup plus 6 tablespoons whipping cream -- (or more)
1/2 cup plus 2 tablespons pure maple syrup
1/2 cup chopped pecans -- toasted
2/3 cup powdered sugar -- (about)

Preheat oven to 375. Whisk flour, oats, 2 tablespoons dark brown sugar, baking powder, baking soda and salt in large bowl to blend. Add butter and rub in with fingertips until mixture resembles coarse meal. Stir 1/2 cup whipping cream and 1/2 cup maple syrup in small bowl to blend. Gradually add cream mixture to flour mixture, stirring just until dough comes together and adding more cream by tablespoonfuls if dough is dry. Gently mix in toasted pecans. Turn dough out onto lightly floured surface. Knead dough gently until smooth, about 5 turns. Using floured hands, pat out dough to 8-inch round; cut dough into 8 wedges. Transfer wedges to baking sheet, spacing 2 inches apart. Bake scones until golden and tester inserted into center comes out clean, @ 20 min. Transfer to rack.

Meanwhile, whisk remaining 2 tablespoons dark brown sugar, 6 tablespoons whipping cream and 2 tablespoons maple syrup in medium bowl to blend. Gradually whisk in enough powdered sugar to form thick glaze. Drizzle or spread over warm scones. Let stand until glaze sets.

NOTES : Tweaked to be similar to Starbuck's Maple Tea Scones. I would add some maple flavoring the next time in the frosting for a stronger maple flavor.

Oatmeal Maple Syrup Muffins


A sweet, yummy, muffin!Try it with real maple syrup if
you get a chance but any maple flavor syrup will do! You
may also add 1/2 cup of chopped walnuts to this recipe if
you wish.

Prep Time: approx. 10 Minutes.
Cook Time: approx. 20 Minutes.
Ready in: approx. 30 Minutes.
Makes 1 dozen (12 servings).

1/2 cup butter, softened
1/2 cup dark brown sugar
1/2 cup real maple syrup
1 egg
1 teaspoon vanilla extract
1/2 cup half-and-half
1 cup all-purpose flour
1 cup quick cooking oats
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon


Directions
1 Preheat oven to 375 degrees F (190 degrees C). Grease
muffin cups or line with paper muffin liners.
2 In a large bowl, cream together butter and brown sugar.
Beat in maple syrup, egg, cream and vanilla.
3 In a separate bowl, stir together flour, oats, baking
powder, baking soda, salt and cinnamon. Stir flour mixture
into egg mixture just long enough to incorporate. Spoon
batter into prepared muffin cups.
4 Bake in preheated oven for 15 to 20 minutes. Remove
from pans and place on a wire rack to cool before serving.




Maple Oat Muffins

A tasty spiced oatmeal muffin, flavored with maple syrup.

Ingredients:
1 cup flour
1 cup rolled oats
4 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon cinnamon
1 teaspoon ginger
1/4 teaspoon nutmeg
1 tablespoon brown sugar
1 egg
1/4 cup maple syrup
2/3 cup milk
1/2 teaspoon vanilla
2 tablespoons melted butter



Directions:
In a large bowl, combine flour, rolled oats, baking powder, salt, cinnamon, ginger, nutmeg and brown sugar.

In a small bowl, beat egg. Stir in maple syrup, milk, vanilla and melted butter. Pour over the dry ingredients and stir only to moisten.

Pour batter into greased or paper lined muffin tins and bake at 375 degrees F. for 20 minutes.
