Great idea! Thanks for posting. We try to have at least 1 vegetarian main course every week. A CL favorite from last year was the hominy chili. Since the weather is turning in Wisconsin, that will probably be our Sunday supper. Other ideas?

How about a Shepards Pie using TVP? Textured vegetable protein is a soy product that has lots of protein and no fat. I have a few good recipes for TVP if anyone is interested. (I buy it in bulk- dry from the local Wild Oats market)

I've converted a number of meaty recipes to vegetarian ones by using mushrooms, soy products and beans in place of the meat.

Vegetarian lasagna is an easy dish that appeals to almost EVERYONE -- so if your family is picky, this is an idea.

Or how about a smokey chipotle corn chowder?

I'd be interested in those recipes! Is TVP is similar to the frozen veggie crumbles you can get at grocery stores?

Speaking of vegetarian dishes, does anyone have a good vegetarian lasagna recipe? I love this especially when it's loaded with cheese. Thanks

Shepard's Pie

4 medium potatoes, peeled and quartered
skim milk, salt & pepper.
1C fresh or frozen cooked corn
2t canola or veg oil
1 C Chopped onion
1/4 C chopped celery
2T each chopped red pepper & carrot
2 cloves garlic minced
8 oz tomato sauce
1/2 C vegetable stock
2T Worcestershire sauce
1t each cumin & dried basil
1 1/2 Cups granulated TVP
1C tomato juice
1T cornstarch

Preheat oven to 375.
Boil potatoes then mash with enough skim milk for a smooth consistency. S & P to taste
Set aside.

Heat oil in skillet and saute onion, celery, pepper, carrot and garlic til tender about 5 mins.
Stir in tomato sauce, stock, Worcestershire sauce, cumin and basil. Bring to a boil, stir in TVP. Turn off heat, cover and let stand for 15 mins.
In small bowl or cup stir together tomato juice and cornstarch. Add to TVP and heat over medium heat for 1-2 minutes.
In a 2 1/2 quart casserole, layer the TVP mixture, then the corn, then potatoes. Bake for 25 to 30 minutes.

6 Servings
188 Calories, 13g protein, 3g fat, 28g carbs, 425 mg sod, 0g chol, 4.5g fiber.

The nutrition info does not include the corn and 2t of oil.

Sue K & Ginny177- The TVP that I buy is not the same as the frozen veggie crumbles. I like it much better. It is dry and found in the flour and grain section in my local health food store. They also sell it in bulk, by the legumes etc. The prepackaged brand is "Bob's Red Mill" and is made from 100% soy flour. The package is 10oz and sells for $1.99. I believe I can get 2 Shepard's Pies out of 1 package - such a deal! Their web address is www.bobsredmill.com (http://www.bobsredmill.com)

Ginny177- They have a Cajun Red Beans & Rice recipe on the back. I haven't tried it...yet!

Wow, I just went to Bob's website (my first time) and typed in TVP and there it was, at a much better price also!

On Sunday October 1st is world vegartarin day. It might be a good time to make those bean burgers from a few years ago. Just wanted to share the info with you guys and gals

are you looking for traditional lasagna (red sauce) without the meat or veg. lasagna with bechamel (white cream) sauce? I have the latter if you're interested.
