I feel completely GOOFY asking this.... but I've made something that requires all of the cooked egg whites (as in deviled eggs w/o the yolk) and have a dozen boiled (cooked) egg yolks to either throw away(!) or keep and do something with----What do I do with egg yolks already "cooked"?? Throw them away??? Please help if you can. I would've pitched them, but I HATE wasting!! http://www.cookinglight.com/bbs/frown.gif

I say throw them away. They're cheap and they are bad for you anyway!

You could add them to potato or macaroni salad. Heck, I'd even mash them a little, add seasonings, sour cream or mayo and make a dip, sandwich, or cracker spread. Crumble them over a cobb salad, or a spinach salad.

Thanks, Phoebe. You took the words right out of my mouth. There's so much conflicting information about eggs out there -- and often times they get a really bad rap.

How about mashing some up with anchovy paste, lots of garlic and olive oil and a bit of vinegar for salad dressing? Yum!

Once again I have to speak up for the poor maligned egg yolk! http://www.cookinglight.com/bbs/tongue.gif Eaten in moderation (like so many other things), egg yolks are good for you! They're packed with vitamins and minerals, including vitamins A, D, and E and iron, whereas the much-touted egg whites have almost no nutrients except some protein.
I like a hard boiled egg yolk mashed on a half of an English muffin. Yum. http://www.cookinglight.com/bbs/wink.gif

I have had the same dilemma with Egg yolks.
I decided to make a yellow cake.
I think a little cake is good for a person, so when you get a bonus of some extra egg yolks I say make a yellow cake, Yup from scratch, that's a good way to put egg yolks to good use.
