View Full Version : Easy, Good Baked Chicken Recipe -- Uses Ketchup!

Here's a recipe I found in Taste of Home magazine. It's really easy and uses basic stuff found in your refrigerator. Also, it uses no extra fat. I keep the skin on the chicken then peel it off before eating, but it would probably bake fine with the skin taken off first.
3 pounds of chicken (I use all breasts still on the bone)
1 Tablespoon flour
1/4 cup water
1/4 cup packed brown sugar
1/4 cup ketchup
2 Tablespoons white vinegar
2 Tablespoons lemon juice
2 Tablespoons worcestireshire sauce
1 small onion
1 teaspoon ground mustard or a Tablespoon of regular mustard
1 teaspoon of paprika
1 teaspoon of chili powder
1/2 teaspoon of salt
1/8 teaspoon of pepper
Place chicken in large Ziplock bag. Add all other ingredients. Close bag tightly (make sure it's closed!) and knead so that all ingredients cover chicken. Let marinate in kitchen a few hours or overnight. When ready to bake, spray casserole dish with non-stick spray. Dump chicken into casserole. Bake for 1 hour at 350 if using giant boned chicken breasts. You could also try using boneless, skinless chicken breasts. In this case, you would probably only want to cook for 45 minutes.

Thanks for posting this. It sounds pretty good. Quick question, though. My husband can't tolerate spicy....how hot is it with the chili powder and paprika? Thanks.
I just love how easy it looks! As a new mom (2-1/2 mos.) I sure do appreciate these kinds of recipes.

The funny thing is, it does NOT taste like barbecue sauce or Russian dressing. All the spices come together to create a unique flavor. I was skeptical at first, but the recipe turned out really good. I always serve it with baked potatoes.

I'm bumping this up since everyone seems to be so into chicken recipes lately. This recipe is from an old issue of Taste of Home. I keep finding myself going back to it again and again because it's just so good and so easy.

Darlin,
I generally use bone-in chicken and cook it uncovered. I also leave the skin on so the chicken will stay moist. If you make this with boneless, skinless breast, you might want to cover it with foil.
Yesterday I discovered that this dish works well in the crockpot too! I used frozen, bone-in breasts and cooked them for 6 1/2 hours on LOW.

I made this over the weekend but didn't get to eat it then....just reheated it for lunch and it was wonderful!
I used skinless/boneless breasts and cooked them uncovered. I had to cook them for almost an hour but probably only because they weren't thawed all the way through.
I'm wondering though....I dumped all the marinate in the dish too (I forgot to spray it with cooking spray before I did it....that's when I realized maybe the marinate wasn't supposed to go too)....do you not cook it in the juice? Are my husband and I going to die of ickies now???:D :confused: :eek:

I always dump everything into the pan and I'm alive to tell about it :). I haven't looked it up, but I'm 99% certain that cooking at 350 for an hour kills salmonella -- which is what you worry about with raw chicken. There are tons of recipes where you pour the sauce ingredients over raw chicken and then cook it all.
The rule is that you're not supposed to brush uncooked marinades over chicken that has already been cooked.
Glad you liked it! By the way. I also discovered you can make this recipe in the crockpot. Instead of marinating, just dump everything into the crockpot and heat on low for 4 1/2 to 5 hours (for boneless, skinless breasts) or 6 1/2 hours for chicken on the bone.
