I love the D.L. Jardine brand of salsas. They have such a selection of fruit ones but sometimes I find one I really like only to discover that it's not to be found on any shelves. I bought a bing cherry one about two years ago but have been unable to find it again. And just yesterday bought their pineapple one. My question is since there have been a couple of threads on salsa, has anyone ever made homemade ones...besides the mango one(down-island salsa)?

I've made a few of the mango ones which I like a lot - here are several from CL I have not made, but look good..

Cantaloupe-and-Cherry Tomato Salsa

INGREDIENTS FOR 6 SERVINGS:
2 cups diced cantaloupe
2 cups quartered cherry tomatoes
1/4 cup minced shallots
1/4 cup chopped fresh oregano or basil
2 tablespoons minced seeded jalapeno pepper
2 teaspoons grated orange rind
2 tablespoons orange juice
2 tablespoons lime juice
1/4 teaspoon salt
1/8 teaspoon black pepper

INSTRUCTIONS:
This salsa, with its unusual combination of ingredients, is great with beef,
pork, quesadillas, or chips.

1. Combine all ingredients in a bowl; toss well. Cover and refrigerate 30
minutes. Yield: 6 servings (serving size: 2/3 cup).

Cranberry-Mango Salsa

INGREDIENTS FOR 6 SERVINGS:
1 cup finely chopped cranberries
1 cup chopped peeled mango or papaya
1/4 cup minced red onion
2 tablespoons minced fresh cilantro
1-1/2 teaspoons honey
1 teaspoon minced seeded jalapeno pepper
1/4 teaspoon salt

INSTRUCTIONS:
This recipe is part of the Spicy Chicken Quesadillas in the December 1998
issue.

1. Combine all ingredients in a small bowl, and toss well. Yield: 1-1/2 cups
(serving size: 1/4 cup).

Pineapple-Chipotle Salsa

INGREDIENTS FOR 10 SERVINGS:
2 teaspoons vegetable oil
3 cups diced fresh or canned pineapple tidbits
1-1/2 cups diced onion
1 cup diced seeded tomato
2 garlic cloves, minced
1/2 cup pineapple juice
2 tablespoons brown sugar
2 tablespoons cider vinegar
2 drained canned chipotle chiles in adobo sauce, minced
1 tablespoon adobo sauce (from drained chipotle chiles)
1/2 cup chopped fresh cilantro
2 tablespoons fresh lime juice
1/2 teaspoon salt

INSTRUCTIONS:
1. Heat oil in a large skillet over medium-high heat. Add pineapple and onion;
saute 10 minutes or until lightly browned. Add tomato and garlic; saute 1
minute. Stir in pineapple juice, brown sugar, vinegar, chiles, and adobo
sauce. Cook 6 minutes, stirring occasionally. Stir in cilantro, fresh lime
juice, and salt. Cool. Yield: 2-1/2 cups (serving size: 1/4 cup).

1/2 cup diced plum
1/4 cup minced shallots
3 tablespoons orange juice
2 tablespoons minced fresh parsley
1 teaspoon grated lime rind
2 tablespoons fresh lime juice
1-1/2 tablespoons chopped seeded jalapeno pepper
1 tablespoon minced fresh mint
1 tablespoon honey
1 teaspoon minced peeled fresh ginger

INSTRUCTIONS:
1. Combine all ingredients in a bowl. Cover and chill. Yield: 2 cups (serving
size: 1/2 cup).

NUTRITIONAL INFORMATION:
CALORIES 65 (3% from fat); FAT 0.2g (sat 0g, mono 0.1g, poly 0.1g); PROTEIN

I don't remember whether it was on this board's beginning or before the change over, but I posted a couple -- a watermelon and a melon (cantaloupe and watermelon) salsa. I can repost if those are interesting.

I have made the pineapple chipotle salsa before and not only is it really good, but your friends will marvel (another one of those'two heads' things!!) at you!
