I made this cake yesterday and it is really yummy! I found it some time ago in the local Atlanta newspaper.
3 tbs granulated sugar (to coat pan)
2 cups all purpose flour
2 tsp ground cinnamon
1 1/2 tsp each baking powder and baking soda
1/2 tsp salt
3 large eggs, lightly beaten
2/3 c brown sugar, packed
1/4 cup apple butter
1/4 cup maple syrup
1/4 cup apple juice
1/4 cup nonfat plain yogurt
2 tbs vegie oil
maple glaze (recipe follows)
Heat oven to 375. Coat a bundt pan with cooking spray and sprinkle with sugar, shaking out the excess. In a mixing bowl, com bine flour, cinnamon, baking powser, baking soda and salt; set aside. In a separate bowl, whisk toghether eggs, brwon sugar, apple butter, maple syrup, apple juice, yogurt and oil Slowly add dry ingredients and stir just until moistenened. Pour batter into prepared pan. Bake until cake springs back when touched lightly (25-35 minutes).turn cake out onto acooling rack. Allow to cool completely before covering with glaze.
Maple glaze-In a medium bowl, combine 2 cups confectioners' sugar and 2 tsp vanilla extract. Gradually whisk in enough maple syrup -about 1/2 cup- to make a smooth glaze. Cover cooled cake with glaze (it will soak into cake).
