Help! I can't find my Cooking Light Mag. from Jan/Feb '96 which has the Spicy Orange Hummus recipe. It's on page 104 and I really need it since I can't remember all the ingredients. Good thing you mentioned the month of the issue, because I couldn't find it in the index by title or ingredients.
Spicy Orange Hummus
1/4 cup parsley leaves
2 tablespoons chopped onion
1 garlic clove
1/4 cup unsweetened orange juice
2 tablespoons tahini (sesame seed paste)
2 tablespoons rice vinegar
2 teaspoons low-sodium soy sauce
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground coriander
1/4 teaspoon ground turmeric
1/4 teaspoon ground cumin
1/4 teaspoon paprika
1 (15 ounce)can chickpeas (garbanzo beans), drained.
Drop parsley, onion and garlic through food chute with food processor on, and process until minced. Add orange juice and remaining ingredients and process until smooth. Serve with pita trianges. Yield: 1 3/4 cups (serving size: 1 tablespoon)
