You guys have been such a huge help with chicken ideas - how about ground turkey breast? I have a couple of 1 1/2 pound packages in the freezer I want to use. I usually make turkey meatballs (really declisious), however I freeze some for later. SInce I froze this turkey prior to making anything with it I hesitate to make something and refreeze. Any ideas?

Turkey Burgers Deluxe
1 pound fresh or frozen ground turkey
1/2 t. salt
1/8 t. freshly ground black pepper
1 sm. onion, peeled & chopped fine
1 clove garlic, minced
1 t. butter
1/4 c. fat-free sour cream (or use regular)
1 t. chives, chopped
Mix together turkey w/ salt, pepper, onion, &
garlic. Shape into 4 large patties. Melt butter in skillet; brown patties on both sides. Cover & cook 10 min., or until patties are cooked through. Remove from pan and keep warm. Stir sour cream into pan to mix w/ browned bits; add chives. Add additional salt & pepper to taste. Spoon sour cream mixture over patties to serve.

Ground turkey breast can be used in most recipes calling for ground beef. In fact, it's even OK to combine the two in something like a meatloaf. I try to use the turkey in most cases since it's much lower in fat.

Make stuffed peppers, (red. yellow, orange) look very pretty. You can use it in burgers chili,meat loaf, tacos. Last night I used turkey in a potato pie casserole. In recipes subst the beef for ground turkey (you might have to adjust seasoning as turkey tends to be bland)
I have been making turkey breast breakfast sausage. It reheats nicely and makes a quick breakfast with some hashbrowns or fruit. It really tastes like breakfast sausage with out the fat!
TURKEY SAUSAGE
1lb ground turkey
1/2 Cup egg substitute
2 teaspoon ground sage
fresh ground pepper
couple dashes of soy sauce
3 Tbsp water
Mix all ingredients in a bowl. Form into hamburger patties. Coat a nonstick skillet with cooking spray. Cook patties, browning on both sides. When nearly cooked, add a tablespoon of water, cover, and cook a minute or two more on low heat to cook through.
HASHBROWNS
Take a cooled baked potato. (I make mine ahead of time.) Grate with a cheese grater--including the skin. Season with salt & pepper or you favorite seasonings. Spray cookie sheet with cooking spray. Place grated potato on cookie sheet. Coat with a little cooking spray. Place under broiler and cook until brown. Turn & brown other side.

I am very sorry for any confusion, I typed the recipe wrong for the Turkey sausage. The amount of egg substitute should be 1/2 Cup.
The recipe should be as follows:

I have a question? I thought that ground turkey was supposed to be lower in fat, however I went to pick some up at the store the other day and I was surprised at the amount of fat in it. Are there any special brands that I should be looking for? Please help.

Andrea,
Definitely look for ground turkey BREAST, not just any part of meat. That's what I think makes the difference on the fat content. If it's only breast there's no skin, etc!!

I made chili last night with ground turkey breast, and it just wasn't the same as ground round. It cooked up very chunky and didn't break into nice little crumbs like beef does. The taste was ok, but I didn't think that it was the same. Oh well. I'd like to try the turkey meatballs too!

Here is the turkey meatball recipe - they freeze really well. I hope you will like them as much as we do.
1 lb ground turkey breast
Soak 2-3 slices bread in skim milk (I use whole wheat bread) - about 1/2 - 3/4 c milk (to absorb). Add 3 egg whites (or 2 eggs), salt and pepper to taste, 1 pcke lipton onion soup mix and 1 lg tbspn cottage cheese. Add the ground turkey to this mixture. IT may be very soft.
Form into small balls and place on baking sheet coated with cooking spray. Bake at 350 for 10-12 minutes.
