I am planning on making the Brownie Cheesecake Torte for a family party tomorrow night and I need some help. I thought that I remembered reading once that when baking a cheesecake it helps to put the pan(while baking) in a bath of water. This I guess was suppose to make the cheesecake creamier.
Does anyone know anything about this? IF so please help.

I suggested this in one of the other threads. The water tends to keep the cheesecake from drying out and cracking on top.
Note: you need to wrap the outside of the springform pan in foil to keep the water out!!
I find that I can fit a 9" pan in an 11x15 casserole dish pretty easily. Place the springform pan in the dish and then fill dish with 1 to 1.5" of water. Place dish in oven and cook according to directions - about 300 or 325 - when I use the water I usually don't bake the cheesecake at a higher temperature for part of it (some recipes say to do this - I don't recall if this one does or not). And then at the end of the time, just check for doneness - if its still jiggly (more than a small part of the center) cook a little longer.

MaryH- When you made this recipe did your crust get done? Mine was done on top but then when I went to cup into it, it was gooy on the bottom. Any suggestions?

Andrea - I make this recipe a lot. Love it ! But I have had some variation in the donness of the crust.( Always tastes good tho ). I have wondered if it ahas to do with the type of Brownie mix used as I haven't always bought the same brand.
