Ok then!!
I just got back from a dinner get-together at a friend's place and was wondering what other's "signature" salad recipes were!! I have many, b/c I love salads, but I would love input and possibly other's recipes and/or suggestions!!
Tonight, I happen to bring a Toasted Goat Cheese Salad and it is really good. (Usually at home I combine everything from pine nuts to veggie bacon bits to feta to olives, ETC!!!) But I wanted to know what is YOUR best or favorite salad to bring or make?????

My favorite is called "Sunshine Salad"
1/2 head iceberg lettuce
1/2 romaine lettuce
green onions, chopped (1 bunch)
1 can mandarin oranges
sugared almonds
Dressing;
1/4 to 1/2 cup oil
all the juice from the orangess (about !/4 cup)
2 TBSP vinegar
freash ground pepper
Sugared Almonds:
Toast 3/4 cup slivered almonds in a non stick fry pan untill light brown, remove
melt 1 tsp butter in pan, sprinkle 1-2 tsp brown sugar, add almonds, shake to coat and remove to cool.
Mix it all up
This is the recipe, but I do play with the quantities of the ingredients- Enjoy!

Lesliem's Sunshine Salad is my family's favorite. My kids just call it "THE SALAD" because they love it so much. I always know which one they are referring to. One of the best things about this recipe is it can be done ahead of time and then tossed together right before serving. I place the almonds in foil to keep them crisp. Mix the dressing in a small jar. All of the vegetables, can of oranges, plus the almonds and dressing all go together in a large ziploc bag. This travels especially well if you can keep it cold. Just drain the oranges and shake everything together in the bag before serving. A nice addition is sliced avocado.
