I love chicken breast, but it is really expensive in my area. And it seems that all the low-fat recipes only call for chicken breast.
Does anyone have any healthy chicken recipes that don't call for chicken breast?

If you go to http://chickenrecipe.com/default.asp, on the left side of the page you can choose to view chicken recipes based on the cut (thigh, ground chicken, etc). Not sure how many of them would be low-fat, but I know there are tons of recipes to check out and I'm sure you can adjust your ingredients accordingly so they are low-fat.
Just out of curiousity---how much DO you have to pay for chicken breasts in your area?

Do you have a Sam's Club or BJ's (wholesale club type place) in your area? I wouldn't necessarily join it just for this, but in my area (in VA) they have bags of frozen chicken breasts for $5 for 10 pounds. It's better than the grocery store price and it keeps till you use it, pretty much.
I have a cookbook called 100 Favorite Chicken Dishes by Patricia Tennison--it has recipes involving chicken thighs and whole chickens as well as chicken breasts. No nutritional info, though. Chickenrecipe.com does now have nutritional info, though, so at least you'll know how much fat is in it.

Two of my favorite chicken recipes from CL use chicken thighs. They are: Chicken and Rice with Carmelized Onions (April '98) & Smothered Chicken and Barley (Jan/Feb '98). My Mastercook also has about 16 other recipes using only chicken thighs or drumsticks. If you'd like any of the recipes, let me know.

Here's a very good chicken thigh recipe:

Indonesian Coriander-Honey Chicken
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 tablespoons peanuts
2 teaspoons fresh ginger -- minced
3 cloves garlic -- minced
1/3 cup low-sodium soy sauce
1 tablespoon ground coriander
1 tablespoon honey
1/2 tablespoon Thai chili paste -- (increase slightly)
12 4 ounce boned chicken thighs without skin -- boned (about 1 1/2 lb.)
1. Place the first 3 ingredients in a food processor; pulse 2 to 3 times or until minced. Add soy sauce, coriander, honey, and chili paste, and process until smooth. Place marinade in large bowl, add chicken, and toss to coat. Chill 10 minutes. (More taste if marinated several hours.)
2. Preheat broiler.
3. Remove chicken from marinade; discard marinade. Place chicken on a foil-lined baking sheet; broil 6 minutes on each side or until done.
Yield: 6 servings (serving size: 2 thighs)

Under the recipe search on CL if you type in chicken, you'll find a recipe called Chicken in Wine Cream Sauce. It calls for thighs, I have made it twice but with breasts (not a big fan of dark meat) but it a wonderful dish.

I made the roasted garlic and rosemary chicken (don't know when its from, but I bet someone could post it). It was very good and unbelievably easy!

Here in Anchorage, Ak. the Chicken runs like this, when on sale:
Boneless-skinless chicken breasts- $1.79#
Bone-in chicken breasts (fam. pack)- $1.19#
Fresh whole fryers- $1.19#
Frozen whole fryers- .79 cents#
Thighs/Legs-I have a bunch in the freezer but, for a family pack of thighs or legs they usually run on sale about $6. to $7. each. Thighs have about 12 in the pack and Legs 16.
Since I cook for 6, I buy family-pack ONLY! http://www.cookinglight.com/bbs/wink.gif. IMHO you could just make thighs or legs in place of breasts in some of your low-fat recipes. Like I said-I cook for 6 and do it often! Some recipes just have to have chicken breasts though, so the recipes may need a little adjusting. I was surprised, but boneless skinless chicken breasts are also $1.79/lb here in the Chicago Area. I buy on sale and freeze in small portions. I also buy the Tyson chicken strips frozen on sale and use in all kinds of dishes.
