I need a recipe I have misplaced by tomorrow afternoon. I am cooking this for someone, but can't find it! It is in the August 2000 issue on page 122, it is also the cover of that issue. It is the Italian Meatloaf with Fresh Basil and Provolone. It is a great recipe if you've never tried it! If anyone can please help I would be most appreciative!! Thank you sooooo much Beth!! I did a search under the exact name of the recipe but for some reason it didn't show up. I am new on this forum so maybe it was user error! I have been busy starting my own business and haven't had much time to browse, but I'm glad I found this forum and hope to be posting and giving my two cents worth more often!

ITALIAN MEAT LOAT WITH FRESH BASIL AND PROVOLONE
1 cup boiling water
1/2 cup sun-dried tomatoes, packed without oil
1 cup seasoned breadcrumbs
3/4 cup finely chopped onion
3/4 cup chopped fresh basil
1/2 cup(2 ounces) shredded sharp provolone cheese
2 large egg whites
2 garlic cloves, minced
1 pound ground round
cooking spray
1/3 cup ketchup
1) Combine boiling water and tomatoes in a bowl, let stand 30 minutes or until soft. Drain tomatoes, finely chop.
2) Preheat over to 350.
3) Combine 1/2 cup ketchup, breadcrumbs, and the next 6 ingredients (breadcrumbs through beef) in a large bowl. Add tomaotes to meat mixture. Shape meat mixture into a 9 x 5 loat on a broiler pan coated with cooking spray. Spread 1/3 cup ketchup over meat loat. Bake at 350 for 1 hour or until a thermometer registers 160. Let stand 10 minutes before slicing. Cut into 12 slices.
Yield: 6 serving (serving size: 2 slices)
