I am trying to help an old friend by helping him lower his sugar he's a type 2 diabetic. But he broke his foot and not going to be active for the next 4 months. Does anyone have low carb recipes. I have told I will cook him dinner but, I do not want it bland for him. Thanks Matt

Shrimp Jambalaya
Preparation Time: 20 minutes
Serves 8
Serving size: 3/4 cup
Ingredients:
2 Tbsp olive oil
11/2 lbs peeled and deveined shrimp
1 medium onion, chopped
1 medium green bell pepper, chopped
2 cups cooked rice
1 16-oz can tomato sauce
1 tsp Cajun seasoning
Salt to taste (optional)
Pepper to taste (optional)
Hot pepper sauce to taste (optional)
Instructions:
Heat the oil in a large skillet and sauté the shrimp, onion, and bell pepper until the shrimp are pink.
Stir in the remaining ingredients and cook until heated through.

Sweet Potato Pie
Preparation time: 60 minutes
Serves 10
Serving size: 1 piece
Ingredients:
3 large cooked sweet potatoes, peeled and mashed
3/4 cup sugar
1/2 cup egg substitute
2 tsp vanilla
1 tsp lemon-flavored extract
1 Tbsp butter-flavored extract
1 tsp cinnamon
1 tsp nutmeg
1/8 cup brandy
1 tsp lemon juice
11/2 cups evaporated fat-free (skim) milk
1 9-inch pie shell
Instructions:
Heat the oven to 350°F.
Mix all the ingredients together and beat until smooth. Pour into the pie shell and bake for 40 minutes.

Your friend should have a schedule for daily exchanges of carbs, fats, proteins, etc. Using that as a guide you should be able to use most any of the CL recipes since each one has the nutrition information listed. It's really more of portion control than actually lowering or omitting just sugar. I learned from having gestational diabetes that you should never eat a carb. without a protein. It keeps the blood sugar level for longer periods. And learned not to eat all my carbs at one meal.

Sneezles, I also had gestional diabetes and still try to have protein with carbs. No more spaghetti w/o protein or mashed potatoes for dinner.

Check out the SUGAR BUSTERS cookbook.
It has really great recipes with little or NO sugar. I'm relatively certain that it has exchanges and other helpful information as well.

Matt, I have been looking into Stevia lately. My sister-in-law gave us a stevia plant that is in my garden. I had no idea what it was so I did some research on the internet. It is a natural sugar substitute that is about 400 times sweeter than sugar. It was banned in the US for a few years because the FDA was investigating it. I had read that they have been using it in other countries for many years, especially Japan where they cannot use artificial sweeteners. I know they sell the paste or powder form on the internet and I have seen a few recipes, too. You hardly have to use any since it is so sweet. I have eaten the leaves off my plant and it is amazing- like eating a teaspoon of sugar.
