keep cans of chicken & beef broth (regular or low-fat/sodium) in the refridgerator so excess fat rises to the top and can be easily removed!
erinyyc, thanks for the great tip. I can't find low fat broth up here north of the 49th, only low sodium. I'll try this when a recipe calls for low fat.

Did you mean to keep the broth in the can itself? I've always heard that it wasn't a good idea to refrigerate any food in the can

Open cans in the fridge are not good because you get absorbed odors and reactions with the metal once exposed to all that air. Okay before it's opened as far as I know.

I never keep OPEN cans in the fridge, but have NEVER had a problem with un-opened cans. I have even kept them for up to a year on the bottom shelf. Freeze unused portions in ice cube trays and transfer to a Zip-lock bag for easy use anytime! If you have any doubts about refridgerating(spelling??) cans, PLEASE check with a health expert. E. P.S. this is my first time on a bulletin board and I'm having so much fun!! Thanks for the replys!

Good tip! While we're on the subject of canned broths, do any of you Great Minds know of any brand/source for beef broth that DOESN'T contain MSG?! Knorr used to have a bottled concentrate version, but the NEW & IMPROVED contains MSG! I use Campbell's Healthy-something line for chicken broth, and even it's getting hard to find!

Don't recall the brand name (it's the only one I've ever seen in the case) but I buy the frozen broth. It comes in chicken, beef, and fish; contains no MSG or fat. It's a shallow white tub(about 8oz I think) with a picture of what the stock is.

People will think I'm nuts but, I make & freeze my own. I learned quick-canned chicken broth, at any store are constantly out of stock http://www.cookinglight.com/bbs/wink.gif; especially whenever it went on sale (& it has MSG!).
I save all bones from chicken in a big freezer bag in the freezer (when I cut my own fryer up, or de-bone breasts, etc.) & when its full, I make a big pot of chicken broth. I freeze it in cubes and in 32 oz. spaghetti sauce jars when I have them-(I ALWAYS make my own spag. sauce, but they appear occassionally somehow, lol!).
I was also going to type in a brand of broth I have a can of that didn't have MSG in it but I saw this ing.- disodium guanylate. Hmmm...

Sneezles--Golly, frozen broth! Whuddathunk to look in the freezer section for broth? Will def. check next trip to the grocerama! THANK YOU FOR THE INFO!
Zinnia--I ENVY your initative & savvy at making your own healthy versions! I always intend to, but that pot never gets on the stove....
