I make plum puddings (made with suet - 1/2 the recipe amt - and soaked in bourbon) a year before using. Last Christmas, I forgot to take them with us on our trip to the family reunion. so they have been refrigerated for 2 years. How can I tell if they are OK?

You can probably thaw and taste the pudding to tell if the flavor is off.
It's unlikely that they will be "spoiled", but they may have a freezer taste to them or be freezer burnt. If you unwrap them and they seem to have discolored drastically, you may want to discard them before thawing, as they are probably freezer burnt.
