Hi all.
Does anyone have any good recipes for breads to serve with breakfast (ie pumpkin bread, etc). I am looking for a few to make for the holidays

I would think any quick bread would go over well. What else are you having for breakfast? I wouldn't make one that was too sweet to go with anything that involves syrup. But, if you want something sweet I have a killer pumpkin cocolate chip bread that I would be happy to dig up for you.
My oldest daughter loves this bread for breakfast; I am going to make some this week to have during Christmas when she is home.

Lemon-Flaxseed Loaf Cake

1 tablespoon granulated sugar
1/4 cup flax seed
1 cup granulated sugar
1/2 cup egg substitute
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup buttermilk
1/4 cup canola oil
2 teaspoons grated lemon rind
1 teaspoon vanilla extract
1/2 cup powdered sugar
1 tablespoon fresh lemon juice
Preheat oven to 350º.
Coat an 8 x 4-inch loaf pan with cooking spray; sprinkle with 1 tablespoon granulated sugar. Set pan aside. Place faxseed in a blender or clean coffee grinder, and process until ground to measure about 6 tablespoons flaxseed meal; set aside.
Combine 1 cup granulated sugar and eggs in a large bowl; beat at high speed of a mixer 3 minutes or until mixture is thick and pale. Lightly spoon flour into dry measuring cups; level with a knife. Combine flaxseed meal, flour, baking powder, baking soda, and salt; stir well with a whisk. Combine buttermilk, oil, rind, and vanilla. Add flour mixture to egg mixture alternately with buttermilk mixture, beginning and ending with flour mixture.
Spoon batter into prepared pan. Bake at 350º for 55 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 5 minutes on a wire rack; remove from pan. Cool completely on wire rack.
Combine powdered sugar and lemon juice; drizzle over top of loaf.

My other daughter loves a zucchini bread which is in the freezer now ready for Christmas. She also likes the sweet potato bread from CL that has flaxseed in it. I have not gotten that into MC yet but anyone would like to have it I will try to get it typed into MC in the next couple of days.

Zucchini Bread

3 eggs -- beaten
1 cup vegetable oil
3 cups all-purpose flour

2 teaspoons cinnamon
1 teaspoon vanilla extract
1 cup chopped nuts
Combine sugar zucchini and eggs; add oil and beat. Blend in dry ingredients; stir in vanilla and nuts. Pour batter into 2 loaf pans. Bake at 350 for 1 hour.

Not sure if you're just looking for quick bread recipes, but this one is great... mom made it for Christmas breakfast last year (using the dried apricots).
