View Full Version : Easy "low fat" Dessert Recipe, Anyone?

Help! My birthday is Thursday, my in-laws are having us over for dinner and I am bringing the dessert. Was originally going to bring a Cheesecake Factory pecan pie cheesecake, but I decided to make something myself that is much healthier and lower in fat and calories. Any great ideas? We're all peanut butter fans and my father in law loves lemon. A lemon cheesecake is out of the question though because my husband doesn't do "cheese" and my mother-in-law doesn't do "seeds," so my original lemon poppyseed cake idea is out.

Or the something or other...banana toffee trifle from a couple of years ago. It was layers of cool whip, sponge cake, bananas, pudding and heath bars. Look great, pretty easy to make and DECADENT.

There's a recipe in the July '00 issue called Peanut Buter-Banana Pie. I made it for my fiance and he loved it. It was very very good and very easy to make.
(I actually used ff cool whip and skim milk and it was still very creamy and rich tasting!)

I usually bake the angel food cake from scratch & add orange zest to the recipe but I think a purchased cake would probably do okay too. I serve the cake with a light pudding that is made from a small package of 'cook & serve' vanilla pudding mix. Add 1 1/2c orange juice to the pudding mix and microwave for 6 minutes, stirring at every 2 min. When done and cooled slightly, stir in 1 c vanilla nonfat yogurt. Put a slice of cake on a plate in a pool of the orange sauce. I then sprinkle berries on top.

I posted a black devil's food cake recipe that has no cholesterol and very little fat - only thing that is at all unusual is that you need a cup of coffee (regular, decaf and reports were that instant would all work fine). You can eat without frosting or my recommendations are (1) lowfat KoolWhip or (2) a dusting of powdered sugar.
