these were very delicious. they reminded me a bit of the two-potato party latkes from 12/99, but just a little different. i probably used more oil than i should have, but they were tasty nonetheless. DH said next chanukah i should make these latkes for the whole family get-together!
i grated the potatoes & parsnip in the food processor and really squeezed a lot of water out. i chopped the onion in the FP also, and squeezed water out of them too. i think that's the key to making good latkes. but then again, i've only made latkes a few times, so i wouldn't exactly consider myself a pro!
