OK, I just got this great new stoneware bar pan from PC, and I want to make biscotti on it. Should I use it with or without my silpat?

This is just a guess, but I wouldn't use your silpat if you are using your stone. I think one of the perks of the stone is it makes things crispier and more evenly baked. I think if you use your silpat, it would kind of cross out the great benefits of the stone. Make sense? Reader beware: I could have just made this whole theory up....but it makes sense to me:o

I agree with Katygirl, although I don't know the "real" answer. I have both a P.C. baking stone and a silpat. I've never used one with the other. To be perfectly honest, I haven't been that impressed with the silpat. I made the chocolate cookies with the peanut butter in the middle from the Martha cookie issue, and the ones I made on the stone turned out much better than the silpat. They just seemed to cook a lot more evenly. Since I now have 2 stones now, I'm not sure why I'll ever use my silpat. Cookies don't stick to the stone anyway.

I would not use the silpats with the stone. They both serve different purposes. I don't have the PC stone but as others have told you the stone will produce the crisp brown bottoms. The silpat is used with cookie sheets and their purpose is to help with no sticking and to take the place of parchment or greasing. :)

When I bought my first stoneware at a PC party they told me there was no need to worry because things don't stick to it. So far, I haven't had a problem with anything sticking, so I don't think you would really need the silpats....

I've used the PC flat rectangle stoneware for about 5 or 6 years for about 99% of my Christmas cookie baking. I use parchment paper on it!!! That helps with the loading and unloading. There's no need to try scooping cookie dough right on that really hot stone when you load the cookies on parchment paper right on your counter. I made 4 batches of cookies Saturday night and didn't move the stone out of the oven the whole time.

PS...absolutely no sticking with parchment paper and the stone!

what an awesome idea! I have the PC bar pan and 4 pizza stones that I use for cookies at Christmas time and always had the dilemma of waiting for them to cool! and waiting and waiting.....

P.S. Nothing, I repeat nothing sticks to stoneware! I would have more if it was more "stackable" in my kitchen cupboards.
